I’m having foil baked salmon with rosemary, DH foil baked boneless chicken thighs with oregano then we’re both having mini jacket potatoes with garlic & something I can’t remember plus fine beans. The spuds are from Lidl & can be fried.

Chilli here as well. Actually, the DC are having chilli which has been defrosting all day, and DH and I are going to get a takeout kebab to celebrate passing his probation at work.

DH is cooking tonight and has repeatedly told me that he’s too tired to have any inspiration about dinner. So, absolutely no idea what’s going to be dished up, but I’m not expecting much

Home made Nando’s chicken and spicy rice

Having a salad with chicken, sweetcorn, avocado, mayo, onion, carrot, red cabbage, lettuce. And a white hot chocolate with marshmallows.

Currently in the oven is a chicken and bacon casserole. There are loads of vegetables in the casserole as I've had a fridge clear out ready for a shopping delivery tomorrow. I've sloshed a glass of wine, a tin of tomatoes and chicken stock over it all. It will be served on rice.

A really easy, stick in the oven, mid week dinner.

No, this is the first time. Have just finished it and it was really lovely. Very easy too.

Seasoned pork ribs with barbecue sauce, served with roast potatoes. Both were oven cooked yesterday and I will reheat in the microwave.

Been out for two glasses of wine and a pub burger. Lovely 🥰
