I’m having foil baked salmon with rosemary, DH foil baked boneless chicken thighs with oregano then we’re both having mini jacket potatoes with garlic & something I can’t remember plus fine beans. The spuds are from Lidl & can be fried.

I have turkey steaks so will make some kind of turkey burgers. Either peri peri breaded or else spicy balti.

we sometimes scatter some pancettta bits in the layers when not feeding veggies....

if you want to go milder on the blue cheese, camboloza or st agur work well too.

My minestrone is a veggie version of this but I tweak every time

Always more garlic and no pancetta
No courgette because not in season
Always cook the tomato base for much longer than 30 minutes with a parmeson rind for flavour
I add waxy potato cubes about 20 minutes before the end
This batch has frozen green beans snapped into pieces rather than cabbage / greens. I added them at the same time as the pasta.

Tonight- Jacket potatoes with roasted veggies and cheese

Tomorrow- Spicy quorn and mango chutney wraps, with homemade wedges and salad. (I normally make them with chicken, but have veggies guests staying)

Sunday- aiming for a roast, but will see how the day goes.

Roast chicken, roasted potatoes, carrots, parsnips and stuffing balls, steamed “whatever green veg is in the fridge” and gravy. Sounds like hard work but it’s actually an easy mid week staple round here, it cooks itself until the last five minutes.

DCs go to their dad’s tomorrow and I’ll be at DP’s for the weekend, so we are on the dregs of this week’s food shop.
So we had beige, freezer crapas 🤷🏻‍♀️😂
Chips, dinosaur nuggets, a few lonely flipper dippers and beans.

Chips and egg.

We make the 'chips' by par boiling cubed potato for a few mins and then roasting them (basically little roast potatoes).
We fry the eggs so that the undersides are all brown and crispy 😋
