What’s For Dinner?

I’m having foil baked salmon with rosemary, DH foil baked boneless chicken thighs with oregano then we’re both having mini jacket potatoes with garlic & something I can’t remember plus fine beans. The spuds are from Lidl & can be fried.

As it's Thursday, a small sherry with some ham & cheese fried nibbles for aperos, then prawn risotto, and probably a bit of cake for pudding.

Sausage mash broccoli Carrots sweetcorn green beans.

I'm eating very early as going out early tonight. So at 6pm I'm going to have some home made guacamole with pitta bread, just trying to think what I could add to this to make it more of a meal. I normally eat at 8 to 8.30pm, probably won't be all that hungry at 6!

Indeed. I'm planning on keeping him at home until he's at least 40 😂.

Apparently he's bringing home some chicken kievs tonight that he's made today.

A posh coop gammon joint I bought in the new year and chucked in the freezer. Will have pineapple and fried egg with home made chips.

Chilli and rice, plus guacamole... made it earlier and it's been in the slow cooker all day! Was off work today so also made a delicious sweet potato and root veg soup for lunch.

We're having vegan sausage rolls with beans and mash

A tin of red kidney beans and one of butter beans, cooked down for a good long while with onions, red/green peppers and some leftover peri-peri chicken cooking juices. Ground coriander, cumin and oregano plus whatever else I fancy - maybe some more peri-peri spices and chilli (if it needs it - the cooking juices will already be pretty hot going by the meal it came from). Sweet corn added for the last little while. Made into quesadillas (plenty of cheese). Had with sour cream, tomato and avocado. Fresh coriander, spring onion and lime to taste.

Cottage pie, all ready to go in the oven. Feeding adult DD who is coming here for a shower as her bathroom is out of commission.

Beetroot burger, oven chips and beans. A nice cold day dinner!

Tofu ramen

Not feeling great all day so told DH to sort out dinner. Knowing him - it will probably translate into fish&chips or local Chinese. Fine with me.

We have an hour turnaround on a Thursday so they're lucky to get some cheese on toast or something thrown at them 🤣

Dd8 has dance on a Thursday so because of the awkward timing this is the one day a week we all pretty much just sort ourselves out for tea. I’ve just eaten some leftover Dominoes pizza from yesterday, dd8 and dd15 have had chicken pakoras and salad in wraps. No idea what dh and dd18 will have.

I was going to do pasta with creamy leek and mushroom sauce but had pasta for lunch. Maybe salmon with cabbage and potatoes, but what to do for newly veggie DC?

Thick cut sirloin steak with garlic mushroom sauce, some M&S potato rosti things, braised cabbage and a small portion of cauliflower cheese.

Left over casserole made yesterday to use up the quality (but massive amount of) sausages from the butcher, with crusty bread. Used a Hairy Bikers recipe because I had zero inspiration of my own.
