Red cabbage recipe that's sweet and spicy instead of vinegary!

Would love to know anyones recipe for red cabbage which turns out full of Xmas spice flavours and on the sweeter side, but whilst still being savoury but not vinegary?
Tried many recipes over time which promise to be the one but just taste more sour than anything. Have only ever had what I'm looking for when in restaurants Xmas Angry

Try this:

1 medium red cabbage, finely shredded
1 large red onion, finely sliced
1 apple grated
1 dsp of soft brown or muscovado sugar
1/2 tsp grated nutmeg
1/2 tsp cinnamon
1 tsp caraway or cumin seeds
2 tbsps chopped walnuts (optional)
1/2 glass red wine
salt and black pepper

Toss everything together and bake very slowly in the oven for 2-3 hours
Sweet, spicy and no vinegar anywhere.

This year I made the Delia one but in the instant pot (online recipe had been adapted for it, but basically the Delia recipe) and it was so good I ate a bowlful of it before freezing it. It was a little sweet, but once it's with everything else it will be perfect. Definitely not too vinegary.

Another recommendation for the Delia recipe, I made it for the first time last year and loved it so have made it again this year and frozen it ready for Christmas. It's spiced and sweet rather than vinegary

you are adding to much vinegar and not enough redcurrant jelly/ grated apple

I use one red cabbage sliced
3 apples chopped
1 onion sliced
3 tablespoons of sugar
i think a tablespoon of balsamic vinegar might be 3 though
knob of butter or marge
5 cloves
5 tablespoons of water
a tablespoon of red currant jelly or similar

put in large casserole with a lid and cook in bottom oven (about 150 c) for 3 hours

Could you make the Delia recipe just in a pot on the cooker. I don't have an oven safe dish with a tight lid.

Traditional German recipe handed down my family:

1 red cabbage
2-3 sweet-cooking apples
1/2 onion
small knob of butter
pinch of salt
pinch of pepper
3tbsp orange juice
3-4 whole cloves
4tbsp brown sugar
1 tsp cinnamon
1/2 tsp allspice

Essentially, chop the red cabbage and finely dice the onion, briely fry in butter, adding salt and pepper.

Add the orange juice, a dash of water, diced apples, cloves, sugar, cinnamon and allspice and stir, then ignore while it simmers for a while under a lid until the cabbage is soft.

I have to warn you, it smells awful initially, but turns really sweet, rich and flavoursome once it has simmered for a while.

I've been using this recipe every year and make mine for a duck roast.

Oh I see, good point.
I have it written down in my battered chef's notebook.: 150 deg C for 2 to 2.5 hours or until tender.

Caramelise red onions then add shredded cabbage. Braise in orange or apple juice with spices of choice (optional: add fruit such as apples) over a low heat for a very long time. No vinegar - delicious!
