Red cabbage recipe that's sweet and spicy instead of vinegary!

Would love to know anyones recipe for red cabbage which turns out full of Xmas spice flavours and on the sweeter side, but whilst still being savoury but not vinegary?
Tried many recipes over time which promise to be the one but just taste more sour than anything. Have only ever had what I'm looking for when in restaurants Xmas Angry

To clarify I've tried recipes with sugars or syrups and Christmas spices but they just turn out lacking that rich Christmassy taste but I know through the wisdom of Mumsnet someone will have a tried and tested winner which I'm hoping they will share.

I’m trying to find the recipe I have done in the past. I think it had red currant jam and apples in it.

I don't follow a particular recipe, but use star anise (scoop it out later) balsamic vinegar and brown sugar, sometimes use cooking apples, sometimes a jar of Bramley sauce. And leave it cooking for a while.

The one @AdamRyan posted is the Christmas cabbage recipe I use every year; it's very good, extremely Christmassy, not vinegary and it freezes really well so you can make it in advance when you have a moment and not take up oven space for it.

I cook my red cabbage like this:

Sliced onion, cabbage and a pepper and fry in sesame oil. When cooked, add a few teaspoons of honey, soy sauce and a splash of balsamic vinegar, and keep cooking until all the liquid has gone. Then serve.

I make this regularly and if you want it spicy add a sliced chilli, or some garlic when the oil is in and just before the veg goes in.

Another vote for the Delia recipe linked above, and my extra secret ingredient I add is a packet of dried cranberries. Sweet and savoury not vinegary and sour.

I should add that I use 200ml not 250ml red w v like the recipe suggested. Also taste as you go along and add what you think it needs. It’s quite a good dish for clearing out nearly finished spice packets at the end of the year.

The Delia recipe is the basic, tried and tested, sweet, savoury and yes, Christmassy flavour - though we have it anytime, with pork.

I mean you can do whatever you like, leave out the vinegar, just be aware that if you cook red cabbage without any acid at all, it will turn blue.

The restaurant dishes you had probably tasted so good because there was a ton of bacon fat and sugar in them.

Increase the proportion of apple to red cabbage, (I use 4 large Bramleys per small head of red cabbage) limit the cider vinegar to less than a tablespoon, no more than half a chopped onion, add a heaped tablespoonful of Muscovado sugar, and put in some powdered clove and cinnamon. Splash of red wine to stop it burning on the pan while simmering. That produces a sweet spicy mix that my kids adored even when v young. I got the recipe from my Dutch MIL, back in the 1970s.

I'm doing mine with chorizo this year, together with cinnamon, star anise and cloves. I add apple and brown sugar for sweetness and either port or red wine, rather than vinegar.

Native German here. Never even heard of vinegar in red cabbage, that sounds egregious! We use either red wine or port. For flavouring add a whole cinnamon stick, whole lemon rind, whole allspice and/or juniper, and cloves. Towards the end, add apple slices caramelized separately with butter and sugar.

Nigella is cooking red cabbage right now, but she is pickling it . Love pickle red cabbage, and cooked. Delicious vegetable.

She’s pickling cucumber now, looks delicious. And now she is using the juice from the salted cucumbers to make a dirty martini! Have to love Nigella.

This is a colleague's recipe. She's brilliant at everything so I'm confident this will be amazing (even tho it does use balsamic...)

One red onion, thinly sliced
Two cloves garlic finely chopped
I apple, peeled, cored and diced
One red cabbage finely sliced
Stick of cinnamon
Three cloves
100ml red wine
300ml veg stock
3tbsp balsamic vinegar
3tbsp demarara sugar
Salt and pepper

Heat some butter and oil in a pan and sweat onions and garlic until they're translucent.

Add some salt. Chuck in your cabbage. Saute for 5 mins.

Slosh in the wine, vinegar and stock, bring to the boil. Add the apple, sugar and spices and reduce.

Cook on a low heat without lis on pan until cabbage is cooked but not jammy* and the liquid is reduced right down.

Season and serve.

*Can't help you with that. It's what it says.

Another vote for the delia one, can tweak with extra bits like cranberries but it's not vinegar &definitely more Xmas spices.
