We are having chicken schnitzel and I am putting some ground almonds into the breadcrumbs as my older DS is a restrictive eater and he needs some extra calories. I am having this with sweet potato mash, peas, roasted tomatoes and apple sauce.

then strawberry custard tarts (M&S).

I've just had chemo a few days ago so not fit for cooking, so we are relying on DH and Gousto boxes this week (I usually enjoy cooking, it's my thing!).

Tonight it's this - www.gousto.co.uk/cookbook/chicken-recipes/venetian-chicken-scaloppine-with-green-beans and I am hoping he also makes his homemade rice pudding with raisins as I'm craving it!

Fusilli and a veggie meatball sauce, followed by dried fruits and nuts. It's the Jewish holiday of Tu b'Shvat, where we celebrate trees and nature, so we traditionally eat fruit today.

Chicken and leek pie (and ham if you have it, I don’t) using yesterdays leftover roast chicken. It’s a Tom Kitchin recipe for Sainsburys. It’s pretty easy, tastes scrumptious and I will serve with long stem broccoli or steamed spring greens. Great to make ahead, reheats really well next day if you don’t eat it in one sitting.

I have a DS i'm trying to get extra calories into too. Any top tips? Mine eats most things but in small amounts and lost weight when he had gastroenteritis before Christmas.

DH is in charge of cooking tonight as it's my birthday so for once I have no idea what's for dinner!

Mongolian chicken and sticky rice with broccoli. It’s not in the slightest Mongolian cuisine so no idea where it got its name.

We’re having lasagne (the last portion I have in the freezer from when I batch cooked a few of them) with oven chips and green salad.
Having a really bloody bad day so embracing the double carbs and convenience!

Oh i sympathise so much as I struggle so much with extra calorie in and also DS eating a reasonable variety of food.. DS1 is 12 and incredibly slim. He has sensory issues around food. One thing that seems to work though is I will make chocolate milkshales using those Complan chocolate powders, plus extra drinking chocolate and vanilla ice cream. I can often get pretty much a full milkshake down him every second day roughly. Otherwise I try and fortify foods so the ground almonds usually go into pancake mix as well. It has to be by stealth.

DS2 is 2 years younger and he has no eating issues at all, thankfully. But DS1's intake really worries me.

Chilli con carne, rice and corn on the cob. I slow cooked it yesterday so only have to microwave it and cook the sides

Chicken, pea and pancetta risotto with yesterdays left over roast chicken. It’s an oven bake risotto so very easy! Serving it with Tesco trio of olive crusty bread and Parmesan. Probably have Christmas chocolate after!
