We are having chicken schnitzel and I am putting some ground almonds into the breadcrumbs as my older DS is a restrictive eater and he needs some extra calories. I am having this with sweet potato mash, peas, roasted tomatoes and apple sauce.

then strawberry custard tarts (M&S).

Sunday roast as we didn't get time yesterday and it's the only time this week when we'll be able to sit down to eat as a family. Chicken, stuffing, roast potatoes, mash, carrots, broccoli and Yorkshires. Better get on with it.

Quiche - we have a glut of eggs to use up. I've just taken it out of the oven so we can eat it at room temp later - it smells amazing

Chilli with vegan mince, peppers, onions and kidney beans in wraps with salad. So far I've managed to stick to the meal plan every day of 2022 which is very unlike me!!

@WhatHaveIFound my eldest has anorexia and flat out refuses to eat the quantity of food on her recovery meal plan, plus she’s vegetarian so harder to eat high calorie. Butter and cream are your best friends. I melt butter into soup and stews, add cream and cheese to everything I can. Some bought desserts can be close to 500 kcal a portion when served with a bit of cream eg melt in the middle chocolate puddings, sticky toffee pudding etc. Ground almonds and nut butters also good to add to things. There’s a chicken dish I do (tofu for dd) which is peanut butter, coconut milk, stock and lime juice. I add butter and ground almonds to hers which makes it really calorific.

Tonight we’re having pork fillet (quorn sausage for dd) with mash and veg

That sounds lovely OP! I love these threads, I get lots of ideas for meal planning. Chicken and leek pie, aubergine parmigiana.....mmmm

We're having Cajun shrimp with basil orzo and iced brownies for dessert! Plus lemon "beergaritas" I think (Mexican lager with a dash of Tequila and a splash of lemonade over ice, yum!)

I made a chickpea, leek and mushroom pie yesterday which turned out massive so we will be having that again! Probably with mash and Savoy cabbage 😋

Thanks, I will have a look at puddings too. He eats peanut butter/nuts already. DS has Long Covid and suffers from chronic fatigue/PoTS. He's been told he's unlikely to kick off the fatigue unless he gains weight. Pre Covid he was exercising every day and I couldn't fill him!

Beef and ale stew with carrots, kale and possibly roast potatoes. I’ve recently gone gf and dairy free to balance some hormone issues- so the usual mash is out!

I've just had chemo a few days ago so not fit for cooking, so we are relying on DH and Gousto boxes this week (I usually enjoy cooking, it's my thing!).

Tonight it's this - www.gousto.co.uk/cookbook/chicken-recipes/venetian-chicken-scaloppine-with-green-beans and I am hoping he also makes his homemade rice pudding with raisins as I'm craving it!

Don't hope ......just ask him for it. You surely deserve it.

DP is doing tomahawk steak tonight - he had a craving last week and as this is ‘date night’ he ordered it for tonight.

We’re meant to be eating healthily so I imagine it will be with broccoli and green beans instead of some sort of delicious potato thing and we’re doing dry January so no delicious Pinot noir to wash it down either - still I’m sure it will be delicious Grin
