Toasted sandwich ideas please

In the autumn I dusted off our trusty George Forman grill and we have been using it again for toasties amongst other things , but although we have tried a few different things it always seems to end up cheese and something ham / pickle / red onion chutney / onion/ tomato / several different cheeses... last week I made Keemer toasties from the book 30 minute Mowgli ( page 72) and they were a life changer - absolutely delicious !

So I wondered if anyone here had a few ideas of different fillings for toasties , we are adventurous and like meat but also happy with vegetarian or vegan options , usually we have them for lunch on a day off at home but the keemer toasties were an evening meal

My university used to do toasties and I often used to get them for breakfast in between a lecture Blush

My favourite was cheese and pineapple 😋

When I was at uni there was a takeaway van that used to do special post-pub toasties.

A submarine roll / panini / whatever with an own brand Mars Bar. They literally put the Mars bar in the roll and toasted it.

I have no idea if it holds up now I'm 40 but at 21 it was the toastie of the drunken gods. In fact I'm seriously tempted to try it at the weekend!

Turkey, Emmental, tomato, rocket and a blob of mayo in a panini.

Sautéed mushrooms with baby spinach and Gouda and a little grate of nutmeg

Brie bacon and chilli jam

Cherry jam and ground almonds (Dust with icing sugar)

Bloody love a toastie

I still miss the 'pizzas' that a local cafe did when I was at uni. Really soft ciabattas warmed up with cheese, tomato and then a variety of fillings. I've never had anything else like them.

Mincemeat - as in sweet Christmassy mince pies mincemeat. Used to do this years ago when I was on old style WW and still wanted to enjoy mince pies without having pastry
I used to do similar. Put mincemeat on a Maria biscuit!!

I have a thingy that makes proper toasties in two minutes in the microwave! It is amazing. I also bought a crumpie thingy but haven't tried that yet! I love a good gadget.

Have you tried using ciabatta with garlic cheese (Boursin) mature cheddar, olives, salami, onion and pepper?

You leave it in the toastie maker for a while until the outside is really crispy

Honestly it's delicious

I frankly would happily eat my way through this whole thread, I’m pregnant and can’t stop eating at the moment.

Yesterday I had a very good falafel , halloumi and chipotle (yummy spicy stuff of some sort) wrap I heated up from M&s and quite keen to replicate this in toastie maker at home now.

goats cheese, thinly sliced red onion

.... with marmalade used in the same way you would use cranberry sauce.

....plus thinly sliced sausage if there was a sausage left over from another meal

lots of butter on the outside of the bread and a sprinkling of salt too.

If i'm trying to be healthy I might add a couple of spinach leaves in too.

Blue cheese, concentrated tomato paste, a little salt (depending on cheese) and lots of pepper. My favourite toastie.

OK.. and the classic cheddar and Worcestershire sauce

This might sound grim - but I used to make banana and marmite toasties at uni. I did genuinely love them.

Stilton and horseradish. I was introduced to this by an old boyfriend years ago at Uni; I have fond memories of him, but even fonder memories of his cooking.
