Toasted sandwich ideas please

In the autumn I dusted off our trusty George Forman grill and we have been using it again for toasties amongst other things , but although we have tried a few different things it always seems to end up cheese and something ham / pickle / red onion chutney / onion/ tomato / several different cheeses... last week I made Keemer toasties from the book 30 minute Mowgli ( page 72) and they were a life changer - absolutely delicious !

So I wondered if anyone here had a few ideas of different fillings for toasties , we are adventurous and like meat but also happy with vegetarian or vegan options , usually we have them for lunch on a day off at home but the keemer toasties were an evening meal

Cheese and spaghetti hoops is also amazing. Must line bred with cheese on both sides to avoid sogginess. Drain off juice as much as possible too

More often though.i just have cheddar or red Leicester with whatever bits of veg I can find - onion, tomato, olives, red pepper, mushrooms, spring onions, etc.

I'm eating at least 2-3 a week 🤣 just lucky that pasteurised brie is allowed now under the regulations, or I'd be so sad.

Tapenade, flaked tuna and tomatoes, with mayonnaise for dipping, it's all the flavours of Salade Nicoise but hot and crunchy too!

Pease pudding, chopped bacon or sliced leftover sausage or black pudding.

We swap the tomato for onion and sometimes add sliced chilli’s.

My university used to do toasties and I often used to get them for breakfast in between a lecture Blush

Sometimes at work we have left over cheese rolls and left over Mac and cheese. Have been known to Chuck the 2 together and stick in the toastie maker

Mincemeat - as in sweet Christmassy mince pies mincemeat. Used to do this years ago when I was on old style WW and still wanted to enjoy mince pies without having pastry

Bombay potato

Ham, sainsbury's mushroom pate and mozzarella or Ham, mascarpone cheese and thinly sliced mushrooms fried in garlic

Leftover bolognese sauce and cheese is also amazing
