What are you having for Dinner tonight?

I have just got back from my second to last radiotherapy and ready to drop! Think I am just going to make pasta and sauce tonight.

Chicken Kiev and crispy potato slices courtesy of Waitrose and steam in the bag veg courtesy of Birdseye. They all do it better than I would any day (though I did make last nights dinner from scratch - Jamie Oliver's Hit and Run chicken, which is as complicated as I can deal with on an average night).

Tortillas filled with southern fried chicken, cucumber, bbq sauce & cheese for most of the kids.
DS2 is back late from work so he'll have a sandwich with leftover garlic chicken.
I fancy hot ham & cheese croissants.

Last night we had the homemade chicken noodle soup leftover from a few days ago. We were both tired, the weather was appalling, and it hit the spot.

Homemade chicken broth (we use the supermarket rotisserie chicken carcass), chicken breasts and thighs, carrots, onion, celery, garlic, fresh ginger, bay leaves, oregano, salt and pepper. All in the instant pot on the soup pressure setting. The added spelt bowtie pasta and let it slow cook for a bit.

I will never buy canned again.

I hope you feel better soon OP. Good job finishing the treatment. I am amazed you have the energy to cook at all.

Lime chicken with coconut chilli pumpkin sauce served with basmati rice and peas. Pumpkin was roasted over the weekend so 20 mins tonight.

It was delicious!

I had some leftover lime butter in the freezer from making this:

Tonight I just pan fried chicken breast strips in salt, pepper and a little garlic (so DC could have them "naked") and poured over the lime butter after cooking for DH and I.

For the coconut chilli pumpkin, I used "chunks" from the lantern, but "scrapings" should work just as well - maybe a bit more "watery". Oven roasted for maybe 20 mins with S&P, a large teaspoon of lazy garlic, same of lazy chilli (obv could use fresh) and maybe 2 large teaspoons of coconut oil. You could try it with coconut spray if you don't have oil. Mash into a sauce.

It was a bit of an "experiment" but it turned out really well. I didn't weigh the pumpkin but based on what I did weigh for pumpkin soup, maybe 200-250g.

You could blitz it for a creamier sauce and add just cooked chicken to it.

I reckon roast pumpkin with some coconut milk and chilli would work too.

Jacket potatoes tonight, with something on the side - probably breaded chicken for the meat eaters.

Has to be easy to eat at diff times dinner on a Thursday as we're all out at different times..

Tonight we're having beyond veggie burgers with cheese (havarti for me probably), sauteed asparagus and apple muffins for dessert. Probably a G&T too!

Tuna pasta bake cooked my way! We are divided as to how it should be made. Half prefer a white sauce, half tomato sauce. I’m team tomato and as I’m cooking that’s what it will be. Tomato sauce with added red onion, red peppers and sweetcorn. Plenty of balsamic vinegar and black pepper.

@AtleastitsnotMonday I used to make the Annabel Karmel tuna pasta bake which had a tomato sauce AND a white sauce!

@NalPolishRemover @Creepypastard I know @JamMakingWannaBe has posted her recipe now but when I saw her description I thought it might be this one-pot meal, which is AMAZING and works brilliantly with chunks of pumpkin instead of the squash/cauli:
