I'd like your absolute laziest meal ideas please

I have an incredibly tough week coming up, where unfortunately huge work deadlines are going to collide with looking after my elderly mum, as well as having DD at home for half-term.

I'm trying to think of ANY shortcuts to get me through it. I'm doing my Tesco order later and would love your very best lazy meal ideas please. Things that you maybe wouldn't eat long term, but will get us through this patch. (I would just order ready meals for a few days, but I have to keep one eye on the salt levels due to blood pressure). Thanks in anticipation!

KittenKong · 18/10/2021 20:43

Oh and I have an air frier - so you can cook fish /chicken/sausages and roast potato wedges at the same wine and whip up a salad or steam some veggies and it’s all ready in 20 mins.

TheWayTheLightFalls · 18/10/2021 20:43

Pasta and ready sauce
Gnocchi with cheese and butter
Whole cooked chicken
Scrambled eggs with beans and toast
Frozen pizza
Ready soups

Each under five min.

@DivingBoardInGuernsey

I love you all. I had forgotten / not thought of loads of these. Reading through them more slowly now.

Answering the "how lazy" question - VERY Grin In between dashing in and out to sort out my mum, and keeping DD busy, and getting my work done, the likelihood of getting the slow cooker sorted in time is nil. Good shout on the batching though, I can probably face doing 1 big dish ahead!

In that case, make a batch of mince with onions, tomatoes, garlic and herbs. Can be turned into cottage pie by adding Bisto and topping with ready made mash, or Bolognese or chilli.
Soontobe60 · 18/10/2021 20:46

We have a dish we call Spanish chips - skinny fries (frozen), in a bowl with 2 fried eggs on top chopped up so the yolk goes over the fries, add a dollop of Mayo with something like sriracha or smoked paprika stirred in. Delish!

ActonBell · 18/10/2021 20:49

Wraps, ready made falafel, ready made guacamole or just mash an avocado, halloumi, bagged salad. Chop the halloumi in the morning (30 seconds) and put in a bowl in the fridge with some lemon juice and herbs stirred in. Heat up the falafel and warm the wraps at dinner time.

Fry some ready chopped mushrooms with garlic. Scatter over ready rolled pastry and sprinkle with grated cheese. Bung in the overnight and serve with frozen veg or bagged salad.

Salmon fillets - create a foil parcel and Chuck in some herbs, lemon, cherry toms. In the oven for 20 mins. Serve with couscous or microwave new potatoes.

Montyman1 · 18/10/2021 20:50

My husband made a super quick dinner tonight:
Onion, Red pesto, dash of cream, sundried tomatoes, fresh pasta. Non veggies had some chorizo on the side but if you’re watching salt that would probably push it over the edge for you

ActonBell · 18/10/2021 20:52

Oh and ready prepped stir fry veg and chicken strips with microwave rice. Don’t buy a packet sauce if you need low salt content- just season with a bit of low salt soy sauce and some ready chopped or fresh grated ginger.

LatteLatteLatte · 18/10/2021 20:53

Also get some microwave rice. It's £1 and you never know when you will need to bulk something out, at the last minute.

Flackattack · 18/10/2021 20:55

Takeaway!!!

Gousto do some healthy pre chopped 10 minute meals which are healthy and delivered to your door. You wouldn’t think it could be that good that quick / I wouldn’t think of the meals - so super easy! Things like orange chicken, prawn noodles etc

GrowThroughWhatYouGoThrough · 18/10/2021 20:56

Fry chicken breast in a little oil. When done, add a mix of equal parts green pesto and cream on top and mix. Serve with rice. The preboiled kind that is ready in 15 minutes.

A ham in the slow cooker doesn’t need any prep apart from boiling for 5-10minutes to reduce the salt content. Do a large one and you can have ham, egg and oven chips, cold on sandwiches and I really like it cold with salad, jacket potato and coleslaw.
A ready made lasagne is one of my lazy dinners with salad or veg and garlic bread.
There’s some fairly healthy ready meals now available in the supermarkets - ones with actual identifiable vegetables!

BlueShirtGirl · 18/10/2021 21:00

Ready packed salad bowl with ready cooked ham/chicken/sausages rolls/feta/cheese

Iamblossom · 18/10/2021 21:01

Boil pasta, drain, stir in jar of pesto, shredded ham slices and cherry toms, add grated cheese, serve.

BlackAlys · 18/10/2021 21:02

Bung chopped onion, stewing beef and Pêr chopped veg in a casserole
Dish, topped with stock and seasoning and whack in oven on 120 degrees in the morning. Thicken with beef granules and dollop in a big spoon of red currant or cranberry. It's delicious. M
Serve with mash - super quick frozen mash in micro.

Terminallysleepdeprived · 18/10/2021 21:05

1 pot stew in the slow cooker...so beef, new potatoes. Pack of casserole veg, beef stock cube. Pint of water and leave on low for 8 hours and just lob gravy granules in just before serving

Pork stew...same as above but I drain off the fluid about 15 mins before serving and chuck a tin of chopped tomatoes in

Ready made family sized cottage pie and a packet of microwave steam veg

Pizza

Asda do bags of frozen chicken chow mein that you literally lob in a frying pan and stir fry for 15 mins all you need to do is chuck a nest of dry noodles in a pan of boiling water for 5 mins (boil the kettle for the water)

Poached egg on toast

Beans on toast

Jacket spuds wrapped in tin foil and lob in the slow cooker for 6 hours then lashings of creamy coleslaw

RemusLupinsBiggestGroupie · 18/10/2021 21:06

Stir fry some carrot and pepper. Add mange tout and some cashews. Quick sauce made of sesame oil, soy, sweet chilli sauce and sriracha. Serve with microwave rice and some spring onions.

Ready made pancakes stuffed with garlic mushrooms and a bit of creme fraiche.
