What's for dinner tonight?

I'm completely stuck for ideas, it will be roast chicken tomorrow, we had pasta yesterday and I have literally no idea what to cook. Kids are fussy eaters so lasagne, or stews don't go down well. Had sausages on Wednesday and spaghetti Bol on Monday. Inspire me with your health delicious meal ideas!

Burgers in buns (beef for all but DC1 who has chicken), oven chips and whatever veg I dredge from the fridge. If I’m feeling fancy I’ll use the crinkle cut oven chips.

Yes.

I lived in England (my husband is English) back in the mid 90's and stayed for nine years. Back then, my local ASDA only used to sell some curry pastes and a few Dolmio sauces in their "international" food aisle that consisted of a few shelves. Finding Old El Paso taco kits were more valuable to me than finding gold!

In my part of the world, corn tortillas are king! I used to have friends bring me masa harina, to make corn tortillas, when they came to visit. When I ran out of masa harina, I had to learn to make flour tortillas because back then, you couldn't find them, at all.

It warms my heart that Mexican, well, Tex-Mex, food is such a thing over there. My husband and I are moving back to England in a few years time to retire. I'm glad that it won't be so hard, food-wise, now.

Anyways, I'm now inspired to make red chile enchiladas with a side of calabasas y elote (Mexican squash, onions and corn) for dinner today :) If you're ever interested, mexgrocer in Luton sells proper Mexican food stuffs and corn tortillas.

I'm going for homemade pizzas. I fancy a proper veggie loaded spiced one.

I've just looked at Pizza Hut menu for inspiration. We don't have any take away services out here in the sticks. I have genuinely just been gonsmacked at the prices! £5 for a portion of potato wedges?!

Veggie stir fry and noodles. We were supposed to be out for lunch but opted out as it is lashing down, so had a mid afternoon cheese board instead.

Chicken forestiere because it’s known as Autumn chicken in our house and today definitely feels like autumn. I’ve made celeriac and potato bonne femme as well, half for today and half to go with roast chicken tomorrow. Yum.

We're having chicken kievs, Cajun fries and corn on the cob roasted with paprika and feta. Possibly apple crumble afterwards, but I might save that for tomorrow.
