What's for dinner tonight?

I'm completely stuck for ideas, it will be roast chicken tomorrow, we had pasta yesterday and I have literally no idea what to cook. Kids are fussy eaters so lasagne, or stews don't go down well. Had sausages on Wednesday and spaghetti Bol on Monday. Inspire me with your health delicious meal ideas!

Fajitas or curry?

We're having spaghetti and meatballs. We were supposed to be having something else (can't remember) but I went to the butchers for other stuff and the meatballs looked amazing so I picked some up for dinner.

Beef tacos (old el paso so I will be shunned for not "cooking from scratch" by MN) with all the sides. Roast beef and apple crumble tomorrow to make up for tonight's laziness!

I'm from El Paso (it's a city in far west Texas) and Mexican and even I'm not immune from making tacos from Old El Paso.

No judgement from me! Enjoy!

Chicken pesto pasta. It does have more than just that though! Chicken, red and yellow bell pepper, red onion all in chunks, throw in oven with a drizzle of oil. Cook pasta, mix everything together adding pesto, feta chunks, and halved cherry tomatoes.

Jerk spiced chicken soup, straight from a supermarket tub. Probably with bread rolls, unless I don't have the appetite.

I'd have plenty of cooking ideas, but no motivation to cook at all. Yesterday's dinner was low calorie ice cream!

Baked beans on toast with grated cheese on top.
We were out for dinner last night and are out for lunch tomorrow with friends so feel like something easy and comforting on this horrible cold day !

More sausage and mash here 😊 except 2 of 3 kids won't eat mash and 1 won't eat sausages 🙄

I hasve just written my weekly menu plan

tonight - teriyaki chicke, rice and broccoli
Sun- Waitrose surprise
Mon- lamb chops, potatos and peas
Tuesday- freezer surprise
wed- chicken stuffed with ham and cheese, corn, carrots and beans
Thursday- pasta surprise
Friday- slow cooker something.

The proliferation of the words 'surprise' and 'something' mean I have lost inspiration, and hope I can dredge up some sort of enthusiasm on the day.

Homemade pizza tonight with pepperoni and mushroom. Will add salad for adults and veg for DC.

Also doing a roast tomorrow so don’t want to cook much today after grocery shopping.

My 'waitrose surprise' meal is because we drive past waitrose on the way back from swimming AND I like their deli section...... thinking one of their picnic pies or fancy sausage rolls with the salad tubs. Pure indulgence really.

I've got covid so no sense of taste or smell. I'm usually such a foodie. So looking for inspiration for something that might at least inspire DHs tastebuds
Google aromatic salmon in coconut milk it's a BBC recipe and really up the chilli and cardomon. When we had Covid I could just about get heat and spice.

I hope your tastebuds get better soon!

Homemade veggie Sheesh/Sheekh kebabs on home made flatbreads (ds has homework to cook a meal from scratch and he dicided on the flat breads, so I went from there) with fattoush style salad and sweet potato wedges.

Spose I'd better get my finger out!

Love reading all these ideas, making me hungry already! We are having veggie sausage tray bake. Basically, sausages, garlic, potatoes, courgette, cherry tomatoes and peppers all roasted in one pan then blobs of basil sauce/pesto type thing on top. So easy and tasty. It's a Rachel Ama recipe, she has great healthy vegan easy to follow recipes if you need some inspiration
