Favourite risotto

I'm a pretty good cook and make most of our meals from scratch but I've just learned how to make risotto and we're loving it. The one I make has bacon lardons, leeks, mushroom and butternut squash in with parmesan. I have the ingredients for crab and saffron coming this week.

I'd love more suggestions of flavour combinations please. We eat anything (except offal!)

Red wine, mushroom, blue cheese and garlic risotto, as a side for a steak. Add anything you want to too - spinach is great.

I don't do risotto very often anymore as two of the DC are not keen but I did an excellent Jerusalem artichoke one last week with lots of garlic, parsley, Parmesan and wine. It was extremely popular with the majority of the household. The meat eaters had griddle cooked pork loin chops with theirs.

Actually, don’t do the above or you will serve crunchy undercooked risotto to your dinner guests... so I’ve been told.

We love butternut squash risotto. Roast cubes of butternut squash till soft and crispy. Also toast a couple of handfuls of pine nuts in the oven. Meanwhile fry onions, celery and grated fresh ginger in olive oil. Add risotto rice, vermouth and vegetable stock. Once the squash is roasted, puree two thirds with some honey and reserve the other to serve. Stir in the puree in the rice the last 10 minutes of cooking time. To serve put rice on plates topped with the remaining cubes of butternut squash, pine nuts and chopped parsley.

My favourite is a lemon risotto topped with scallops and a dry white wine alongside. So nice in the summer.

Another vote for salmon and pea. Usual risotto base of onion etc, then add either cooked or smoked salmon, peas, creme fraiche and parmesan. Can add lemon too (and leave out the creme fraiche if you want to reduce the fat content). Even my fussy youngest son likes it.
