Favourite risotto

I'm a pretty good cook and make most of our meals from scratch but I've just learned how to make risotto and we're loving it. The one I make has bacon lardons, leeks, mushroom and butternut squash in with parmesan. I have the ingredients for crab and saffron coming this week.

I'd love more suggestions of flavour combinations please. We eat anything (except offal!)

Left over beef stew and wine

OMG this sounds amazing! I will try that. Although left over beef stew doesn't tend to happen in this house!

Another one ... on Boxing Day DH makes a Christmas dinner risotto with left over veg, pigs in blankets, turkey and stuffing. It's lovely.

My standard one is chicken and spinach. I put pretty much anything in there though - even grated courgette (good if you're low-carbing because then you can take out some of the rice).

My go-tos are a ‘spring’ one with asparagus, peas/broad beans, spinach and mint; pumpkin/squash and sage; or mushroom and tarragon.

My favourite home risotto is roast butternut squash (must be caramelised) and rocket. Eating out, its lobster

I did a really good one last night, in the freezer I had about 200ml of roasted home grown tomatoes I pushed them through a sieve and then added to a plain risotto along with chorizo, some left over roasted Mediterranean vegetables and lots of torn mozzarella- it was super yummy!

loads of parmesan and butter-

shredded chicken, peas and artichoke is the fav here. I cook the artichokes on a griddle pan first and pop them in at the end.

I did do one with some leftover ham as well which was very nice too

Some fab ideas here.

My favourite is chicken and chorizo with chilli. I use a jar of passata in with the stock. My family are sick of it though as I make it far too often.

At Christmas I bought some lobster and after eating ti boiled the shells to make a lobster stock.

This, with prawns and scallop risotto is in my future...

I used to house share with an Italian student and she would make this

Dried porcini mushrooms (use the stock in the risotto too) chestnut mushrooms, spinach, parsley and parmaesan x

I love salmon and sweetcorn in a risotto with a lot of paprika. It makes it lovely and smokey flavoured.

Waitrose do a nice frozen pea and asparagus risotto which I just Chuck some prawns into.

It's a baked leek and bacon one, I really can't be bothered with a risotto I have to stand and stir for ages! With this one I just fry the bacon and leeks with some garlic, add the rice to the pan and then chicken or vegetable stock and bring to the boil, then transfer it all to a casserole dish and bake until most of the stock is gone.

I like salmon and pea risotto. I use garlic, fish stock, parmesan and a bit of creme fraiche.

We like leek, mushroom and tomato. Start with leeks and chopped mushrooms, stir sundried tomato paste in before stock and add a ton of balsamic roasted tomatoes at the end, sometimes stir through cream cheese too.

I pretty much only make veggie risottos, and I like to do them seasonally - so tonight we are having Brussel sprout and kale risotto.

When I have leftover stuffing or seasoned breadcrumbs I fry it to make a crunchy topping!

I do bacon, pea and spinach but I also use orzo instead of risotto rice. Cooks like pasta but looks and tastes very like risotto rice.

Leek and pea.

Classic plain risotto with lemon.

Or whatever I have in the fridge - I'm vegetarian, so it's always meatfree. I use those Knorr stock pot jellies or Marigold bouillon, glass of white wine &/or lemon juice plus lots of parmesan.
