Favourite risotto

I'm a pretty good cook and make most of our meals from scratch but I've just learned how to make risotto and we're loving it. The one I make has bacon lardons, leeks, mushroom and butternut squash in with parmesan. I have the ingredients for crab and saffron coming this week.

I'd love more suggestions of flavour combinations please. We eat anything (except offal!)

We love a Delia Smith one - oven baked carbonara risotto. You mix raw egg and creme fraiche in at the end. And more parmesan!

My usual is chicken and roasted veg (pepper, red onion, baby plum toms and courgette) but I love leek/chestnut mushroom and butternut squash/sage. Kids don’t really like those though so don’t make them often.

On Boxing Day I do a big turkey and veg one.

Always use lots of wine and Parmesan.

In fact I need to do one tomorrow now!

I love risotto but have to make quite a plain one that suits the whole family so I’m jealous of the ones listed here ! I just do an onion / celery / pea base with smoked haddock and salmon

Love a risotto. Our favourites are;

Jamie Oliver's King prawn and pea (with mint, basil, lemon and parmasan)

beetroot and goat cheese

@Sosigsandwich we just do the chorizo and black pudding with vegetable stock. I sometimes add mushrooms but I'm obsessed, DP doesn't like them. Just make sure its good quality black pudding as the cheap stuff turns it greasy and horrible

Prawn, not necessarily very big expensive ones. Water from cooking or just defrosting them saved and simmered with a stock cube (fish or chicken), 2 bay leaves and 2 cloves of garlic.

Finely chopped onion fried gently first in oil and butter, add rice till crackling, add a small glass of white wine, proceed as usual with the simmering water, add a good squirt of tomato purée, and the prawns shortly before the end, just to heat through.

I’m actually making this tonight.🙂

Also really like asparagus risotto when it’s in season, using the water from simmering the asparagus for a few minutes.

Grated cheese optional for both.

The risotto after Christmas made with stock from the roast. Always the best risotto of the year.

This year it was goose stock (thank-you DM) + mushrooms and chestnuts.
