Because I love these threads and winter food!

We had lamb, apricot, veggie and chickpea tagine, with bulgar wheat pitta and hummus on the side. Was lovely. A teeny bit of lamb leftover from yesterday went a very long way!

Tonight we had scampi and chips, tomorrow we'll be having macaroni cheese. Enchiladas and spag bol are also somewhere on the meal plan for this week.

Egg mayo on 2inch sliced homemade toast x 2, plus salad and olives. Yes sounds a bit lunchy but rather large portion. Yum.

Help - I’m meant to be making a soufflé, but that’s obviously hopelessly old fashioned since my local cookware store has nothing even remotely resembling a soufflé dish to sell. It’s only for one - a one egg job. Do you think I could bake the mixture in several holes of a fairy cake tin?????
