Because I love these threads and winter food!

We had lamb, apricot, veggie and chickpea tagine, with bulgar wheat pitta and hummus on the side. Was lovely. A teeny bit of lamb leftover from yesterday went a very long way!

Gosh your meals sound lovely. We had the supermarket stir fry deal of a packet of noodles, prepared veg and a sachet of sauce. It was meh but Monday is a tough work day and I can't be bothered to cook.

Paella with the left over gammon from yesterday with chicken and chorizo chucked in too. Also the left over veg (carrots and peas) and chopped hard boiled eggs to bulk it out - was delicious!

We’ve got a beef curry with some kind of flatbreads, rice and spiced roasted cauliflower.
And some spinach paneer I think.

Today was a roast but with chicken breasts as no one likes legs in this house! Did some garlic roasted butternut squash with it. Twas yum.

We were supposed to have a nice healthy lentil dahl. But I was passing the butcher earlier and went in and picked up some lovely juicey sausages which we had with chips and egg. Grin

Well it's my birthday so we are having all of My fave things as if we are in a restaurant

Garlic breaded mushrooms with garlic Mayo

Fillet steak and tiny potatoes with chorizo.
King prawns and garlic butter as a topper.
Asparagus and broccoli

Cheeses

Plenty of red wine

Lentil moussaka here with leftover butternut squash vegan cheesy type sauce instead of bechamel.

It was lovely. I’ve done double the lentil mix so I’ll use that and make fresh sauce next time. I can’t cope with making both in one go. Too much effort.

How did you make a cheesy sauce out of butternut squash? DH is vegan and I miss cheesy sauces but hate just about all vegan alternatives.

I couldn't quote your question about the instantpot. I think it is a sort of pressure cooker, yes, and it can also air fry potato wedges (and air fry other stuff probably but I don't know what). It can cook dhal in very little time, and all you have to do is chop the onion and throw the ingredients in apparently. It can also make apple crisps by dehydrating them somehow.
