Do you have a recipe you just can’t make?

My dad made the best French toast. He just had some sort of gift for it.

I know how to make it, but it’s just not the same!

Melanzane alla Parmigiana. However long I stand over the griddle grilling the aubergine slices in advance and getting that criss-cross charring on them, they always end up a bit tasteless and underdone, even when they have been in the oven for ages.

Cauliflower cheese. Separates into cauliflower and washing-up water by the look of it.

Recently it's been anything from my mum's Good Housekeeping cook book (1970s one). I am usually pretty good at cakes but the ones I've made from there have been dry and overcooked.

The French would be horrified by my omelettes but they taste good to me. My quiches, however, are usually pretty spot on.

Pastry here too. I have the world's hottest hands.
Curry and all things curry ish. They are always poor relations of my local restaurant. I would love to be able to whip up a dal, but no, tastes like shite every time.

@ChetChet i love saltfish fritters! And ackee and saltfish dumplings. Used to buy them from mels tasties in walthamstow market but haven't had them since i moved out of london. No point sharing a recipe as zero chance of getting the ingredients where i live

Well if you're using potato in moussaka...

Aubergine is the veggie you're looking for.
Both surely? Every recipe I've seen is layers of potato and aubergine

Try Delia Smith’s moussaka recipe. It's yum.

I've never put potato in moussaka (my Greek friends would have a fit!) Grin

Never seen potato in a moussaka before (Greek-Cypriot).

Tip for Yorkshire puds/toad in the hole - make batter in advance and leave out of the fridge, whizz it up again just before adding to v v v hot oil and sticking back in a v hot oven.

Bread - it hates me.

Even tried a bread making course and still rubbish at kneading or getting anything to rise!

Thing is, I'm not that fussed about them once they are cooked, and I can bake everything else, so I've decided that life is too short to perfect something that I'm not even that keen on!

Chantilly cream! Where you pour hot syrup onto egg white. Mine wind up with solid glass-like sugar stuck on the beaters - just can't get the thing right

I can't stop batter things - Yorkshire puds and toad in the hole - sticking so firmly that most of it is left behind on whatever I've cooked it in, and all I serve up is bits of batter. I've tried everything, including different ovens.

I make beautiful meringues and scones though. I think they're both dead easy.

Proper custard although we think it was due to eggs being too cold as I used to keep them in the fridge. Neither DH or I can make bread. The end result always resembles a house brick regardless of recipe.

I’m a really confident cook and baker but have never been able to get cauliflower cheese right - it never tastes cheesy enough but always a bit too floury and the cauliflower is always either tasteless or bitter. It’s weird as I can do a really good cheese sauce, just as long as it isn’t combined with cauliflower.
And carrot cake defeats me every time - it never actually tastes of anything at all. The worst shop bought version is a million times better than mine.

White sauce. Just can't do it, always comes out lumpy. I'm not a fantastic cook though so maybe that's why?!
