Do you have a recipe you just can’t make?

My dad made the best French toast. He just had some sort of gift for it.

I know how to make it, but it’s just not the same!

I could never make Yorkshire puddings until I had to make them gluten free. Now they're perfect

@namechangenumber204 do you have a gas oven? My Yorkshire's are crap in a gas oven but perfection in my electric oven!

I even made some with lesser quantities so they were low syn on slimming world and used fry light and They managed to rise!

I like James martins recipe, he uses loads of eggs!

I can't make sponge, I think because I'm too light-handed and don't beat them enough. They come out dense and heavy.

On the other hand, I can make meringue, probably for the same reason. I don't tend to overbeat it.

My mother is the opposite. Can make sponge but not meringue.

Toad in the hole. Flat as a pancake every time. Sometimes it puffs up in the oven but by the time it’s on the plate it’s like eating pancake with sausage. So depressing.

My husband spent hours trying (And failing) to make Hollandaise sauce the day I came home with our baby because I’d mentioned eggs Benedict when I was in labour. Neither of us have managed that one since.

For Yorkshire puddings, pancakes and toad in the hole the batter is the same: one large egg beaten, whisk in 50ml water, whisk in 60g plain flour, whisk in 100ml milk and season. This will do a 20cm x 20cm pan for a small toad or about four medium pancakes. Scale up as needed.

For Yorkshire’s and Toad, cover the base of a metal pan with 2ml of oil and get really hot in an oven (min 225 for fan). If you are adding sausages make sure they are browned. Add batter quickly and get it back in the oven ASAP for 25-35 minute.

For pancakes, grease the pan with oil but don’t have so much that it pools. Get the pan nice and hot and use a ladle or jug for pouring the batter in.

Moussaka. Have tried 3 different recipes and followed them to the letter. Every one has resulted in pretty much raw potato amidst a big load of gloop.

Well if you're using potato in moussaka...

Aubergine is the veggie you're looking for.

I microwave popcorn in a glass-covered casserole dish. Put in enough raw corn to cover the base to 2cm and on high for 5/6 minutes.

Dumplings! Yes I know it's just suet, flour and water but mine come out like cannon balls. I have to use the packet mix. Blush

I regularly made cottage pie. For decades. Potato topping fine, but the minced beef or lamb underneath always ended up a bit dry and boring. I love c.pie though and kept making it.

Then

I found a recipe for the Cottage Pie served at the Ivy and OMG my life has been transformed. Grin My cottage pie is now excellent and not the slightest bit dry and boring!

It’s foolproof. I make the whole thing in the mixer, no need to fold in the flour etc, just pulse a few times. The key is to put a big baking/roasting tin in the freezer before you start & have ice cubes & chilled water ready, so you can whip the tray of brownies out of the oven and into the iced water quickly.

Nope, they always turn out flat and stick. I even bought some super fancy non stick paper and the last lot I made were practically welded to it.

Bakewell Tart - it's DH favourite dessert and I've never made an edible attempt. I've now given up murdering his favourite food.

Scones. I'm a good cook and my meringues are legendary, but scones are always a disaster. Thankfully DS18 makes amazing scones!
