1000 calories for a sandwich and a latte? Must be a huge sandwich and latte!
massive deprivations not the way to go. This is likely to end up with a big regain from depriving yourself too much.
healthy, balanced meals and an active lifestyle are much better.

Have you looked at the New You plan? It’s meal replacement and recommended by the NHS. You can add in extra veg and fruit as the weight rolls off. It causes swift weight loss and the support team at NYP are incredibly supportive

So week 2 weigh in has now happened I assume @GeorgeSalad
How did you do? Remember week 2 is tough so if you even managed a pound you are moving in the right direct.

500 cals? Then surely your body will think you’re starving it and you will retain weight

Pick yourself up and start again and then in a week you will be moving forward again. Don't give up on yourself @GeorgeSalad .

Starving people don't retain weight, that's why they ultimately starve to death. I'm not advocating for a 500cal diet but the reason very low calorie diets fail is because people don't stick to them. Although there is some metabolic adaptation which occurs when people restrict their diet, it doesn't happen suddenly at a low calorie amount, it happens to some extent when we restrict to any level.
