Ohh, A Conferacy of Dunces by John Kennedy Toole and The World According to Garp by John Irvine are both hilarious in a very literary way if you enjoy hapless men being confounded and bamboozled and ultimately undone by the strong women in their lives.

The Bottle Factory Outing by Beryl Bainbridge is quietly hilarious in its social obsevation.

Infinite Jest by David Forster Wallace, hilarious, if not a little impenetrable.

Oh! Also, Jennifer Saunder's autobiography. I might of laughed most at that one! I could just hear the British sarcasm in her voice and I had to put the book down to control my laughter at points!

"Hopscotch and Handbags" by Lucy Mangan.

Bought it at an airport and started reading it straight away.

I literally (as in "really" and "not figuratively") laughed until I cried.
To the point where OH and my daughters moved away and wouldn't sit by me.

And I didn't care because the book was so good and so funny.

Not a book but the funniest podcast I’ve ever listened to is My Dad Wrote a Porno. Literally laugh out loud. If you need cheering up, give it a go.

My favourites are the one where they burned a hole in the man's head with a magnifying glass, and baffled the doctors the local hospital for months, and the one about the brothers who made the bomb but cocked up the timer. l've literally wet myself reading that one.
