Any ideas for vegan soup
I've just been throwing in pepper tomato carrots and celery and a stock cube .
And it seems to just taste the same whatever I use .
I've been looking for a vegan soup maker cook book ..but I don't think there is one

Did you find your soup maker made a huge noise @CoffeeBeansGalore

@CoffeeBeansGalore well, yes we were all awake last night 😢then the man over the road decided to mow his front grass at half past eight - so two hours sleep for me.

Nice soups here

@Autumnpug7 some processes a bit noisy but not excessive & not for long.

@CalzoneOnLegs sorry about your inconsiderate neighbour.
I have a husband who does a marvelous impression of a freight train rumbling through the bedroom for several hours. That wakes me & it then takes several hours to go back off unfortunately. No spare room & if I get up it disturbs the dogs who then think we are starting the day early.

@CoffeeBeansGalore thank you …it’s awful, isn’t it, one of the reasons I like autumn winter it keeps the noisy people indoors !

I think my soup maker has been a 5 minute wonder
I'm not good at long recipes, and I haven't really found any recipes I'm really keen to make .
I had this idea of throwing in veg that needed using up and a delicious soup would come out
The reality has been a tasteless mush I've not enjoyed

@Autumnpug7 there was a long thread recently about soup makers, most people were team traditional. I guess you need to find your MoJo with them.

ETA thinking though, it could be because you make vegan soups you can’t add cream, or sauté in butter which really does lift most soups I have found. I hope you manage to find the sweet spot in your soup making

nbee84 · 22/09/2025 19:48

@Autumnpug7 I've just made a delicious creamy sweetcorn chowder. Very easy.

Half an onion
Large tin of sweetcorn (can use frozen)
Half a cauliflower
400ml veg stock
Salt and pepper
Couple of garlic cloves
100ml cream (obviously use vegan equivalent)

Chuck all in soup maker except half the sweetcorn and the cream.
Cook on smooth soup.

Once cooked add the cream and the rest of the sweetcorn and heat through.

Was delicious 😋

I wanted to use the soup maker to aid weight loss ,so have been avoiding oil ,cream ,ect in the soup..which as @CalzoneOnLegs rightly said ,means a lack of flavour and limited recipes.
I will have another go when my recipe book arrives

I'm not much of a cook ,so have no idea what spices to use or herbs to bring out the flavour of different vegetables..so I'm hoping the vegan soup book will give me ideas for bringing the best out of the veg ,but without extra calories

Red lentil. Carrot and ginger. Some coconut milk.

broccoli. Potato. Onion.

Mosaic123 · 23/09/2025 03:19

Courgette soup

courgettes - chopped but unpeeled
Frozen peas - small and sweet
Spring onion chopped
Vegan stock
Soy sauce
Tiny pasta/vegan noodles if you want

Cook veg in water and stock
Add soy sauce to taste
Blend till smooth
Cook pasta or noodles and add

Leave overnight in fridge - the most important step!

Then reheat and eat

CalzoneOnLegs · 23/09/2025 14:32

I don’t ever have soy sauce, but I have that Geo Watkins mushroom ketchup, would it be a suitable sub for a savoury kick ?

ETA should have googled apparently it is a good sub

Fifthtimelucky · 23/09/2025 17:32

I don’t have a soup maker and I am not a vegan, but most of the soups I make are.

I like to roast root vegetables (including an onion) and/or butternut squash, with a bit of olive oil and - little maple syrup, then when it’s cooked, tip it all into a pan, add stock and blend. Sweet potato is one of my favourites.

Autumnpug7 · 23/09/2025 18:20

That's a good idea to roast the veg first
