Anyone planning to do Veganuary this time?

So, January 2020 I mean.

Obviously, we have a couple of months till it starts, but I like to get prepared and practice some vegan meals in the run up.

Is anyone else planning to do it and would they like to join me on here?

Well I got myself a few vegan cookbooks for inspiration as I'm just constantly eating the same things.

I can heartily recommend the vegan one pound meals book (£6 in the works). Loads of very simple and quick recipes using normal ingredients, no black salt, nutritional yeast or meat subs.

Today I'm making Mexican stuffed peppers and there is a great recipe for a creamy pasta sauce made with cauliflower and white beans :)

Parkandride, Naturli butter is by far the best butter alternative. I think you can only get it in Sainsburys at the moment but it's amazing, just like butter, particularly Lurpack in my opinion. Flora is all vegan now and I personally prefer it to Vitalite but it is still margariney. I tend to use the Naturli for things where you're really going to taste the butter like hot buttered toast and Flora for baking, in sandwiches on the outside of toasties etc where it does make much difference (because Naturli is about twice price by weight).

Butter was honestly the thing I missed the most and Naturli has changed my life!

Ooooo so has my first vegan pizza this pm while out for a late lunch. Cheese was really not nice AT ALL!!!!!

I am
Doing keto and Veganuary so made myself some seeded loaf and veto bagels this morning. Have almonds soaking as we speak to make some cheese spread tomorrow. Tomato soup for dinner!

Shop bought vegan cheese is yack! I quite like the mozzarella from asda on a pizza but otherwise, I do homemade.

What has everyone got planned for tomorrow? Am hoping to make a mushroom and kale coconut milk based curry

Flossie - I've been a vegan for a year and a half and there is no good vegan cheese, it all tastes weird. It is the only hard part about being vegan. I've learned to live without it.

So I can barely tell the difference between oat milk and normal milk in my tea. I am very pleasantly surprised as I thought it would be disgusting. Will try it on cereal in the morning.

Oat milk is good in tea, as is Aldi long-life soya milk. I love coconut milk on cereal, it's so good.

I had oat milk on vegan muesli this morning. The oat milk was delicious!! Not been brave to have it in tea yet though!!

Had falafel for lunch and have for chick pea and spinach curry in the slow cooker for dinner.

I’m really enjoying this..

Gutted to read about Quorn not being vegan, I had some yesterday! Sad Failed already.

Silver lining, it was disgusting. A second meat substitute today has convinced me to stay away from the processed fake meat, and get cooking.

FYI, from the list of 10 best vegan cookbooks, Thug Kitchen and Feed Me Vegan are both currently 99p for the kindle version.

Hope you are doing well.

Aldi has some new vegan food in right now. In our branch there were 3 different types of pizza, vegan pain au chocolate, croissants, various sauces, chocolate chip cookies and a few other bits and bobs.

I can also confirm that the new Greggs vegan steak bake is absolutely delicious, even better than the vegan sausage roll.

Anyone fed up of reading labels already? Tesco mark loads of their food really clearly as vegan on the back.

M&S plant kitchen range is all really yummy, great for special treats. They do the best vegan coleslaw.

It's almost too easy being vegan nowadays.

Ah, here you all are.

Just signed up for Veganuary, have been following a flexitarian diet until now.

Not interested in meat substitutes or highly processed food - but using natural sources of protein like beans, lentils, nuts and seeds.

Already a convert to Oatly Barista.

Joining your ranks too. My first veganuary though have been vegetarian for decades. I'm hoping to reset my eating habits as I've slipped into really bad ways because I don't enjoy cooking and DS is a fussy eater.

What is everyone eating today? I've got a portion of mixed bean chilli and brown rice for lunch but no idea what to do for dinner. I've got onions and peppers, a cauliflower and tinned lentils, chickpeas, tomatoes and kidney beans?

I've always assumed so!

My classic quick lunch is a tin of chickpeas mixed with half a tin of tomatoes, mixed with a quarter of a stock cube and then cumin seeds, chili flakes, salt and maybe paprika. Microwave and serve - lush. I had this today, mixed with seitan lumps (made my own seitan - very easy, if inconsistent in outcome).

@NewName73 that really depends on your diet.

So, for example, I love curries and Asian cooking, so noodles, spices, coconut milk and curry powders are essential. I also love mushrooms and cauliflower.

Have you actually planned what you would like to eat?

Had overnight oats for breakfast, and leftover meatballs and salad for lunch (Birds Eye ones). Not sure about dinner yet - may be at home or may be out.
