I’d like to eat more plant-based meals but breakfast is a challenge. Looking for inspiration for something filling and straightforward to make. Thanks!

Porridge with a dollop of peanut butter or granola or overnight oats if it needs to be quick. Toast with marmite.
In weekends etc.: Pancakes made with aquafaba, avocado on toast, fried tomatoes and/or mushrooms on toast.

I have soya yoghurt, frozen berries and some kind of cereal on top. Keeps me full til lunchtime

I'm not vegan, but I often eat avocado on toast for breakfast. Just mash avocado up with plenty of lemon, salt and black pepper and spread it on unbuttered bread.

Avocado on toast

Peanut butter on toast

Chicory and avocado salad

Beans and tinned tomatoes with potato cakes / rosti

I mix up crunchy peanut butter, chia seeds, linseeds & a teaspoon of maple syrup, spread that on toast and put chopped banana on toast. Really delicious.

Otherwise, I do overnight oats with oat milk, crunchy peanut butter, chia seeds, linseeds, cocoa & maple syrup. Then add banana & berries in the morning.

I had this today, toast with vitalite, Linda McCartney sausage, baked beans, mushrooms cooked in garlic oil, a "guacamole" of sorts - avocado, tomatoes and onions with a bit of chilli oil and salt and pepper.

Tomorrow I plan to have porridge cooked with cashew milk, bananas, some ground flaxseed (for omega 3) and almond butter for protein

Normally toast with peanut butter and jam

Occasionally peanut butter and marmite or peanut butter and banana

Sometimes porridge oats made with water with stewed apple, cinnamon or blueberry and a spoon of peanut or almond butter

Vegan sausage (I like Linda McCartney but there are several makes), grilled mushroom, tomato, baked beans and potato waffles or hash browns (check ingredients for different makes, some contain milk or egg). Sometimes I have this for my tea also Smile

On weekdays I have cereal and oat milk or just grab a cereal bar like a Nine bar or eat my lunch at my desk at work before 10am

Weekends are the time for a leisurely breakfast so I alternate between:

Scrambled tofu on toast
Linda macartney Sausage-sandwich
Full English (Linda Mac sausages, beans, mushrooms, hash browns, spinach and toast)
"Bacon" sandwich - Cheatin' bacon is good
Bagels and dairy free cream cheese
Crumpets with lashings of flora dairy free.

usually I soak oats, linseed, nuts and fruit overnight in oat milk in a jar and take it to work.

If I eat at home, I have toast with a drizzle of olive oil and tomatoes (my favourite).

I don’t often do big breakfasts, but I like scrambled tofu and avocado on toast

I have frozen fruit blended with water and coconut water, smoothies using bananas and almond milk, cereal and almond milk or toast with a topping already mentioned.

My absolute favourite breakfast is large field mushrooms grilled, with garlic on, served on a bed of kale or spinach, with some almonds and olives :)

I’m not vegan but hate eggs and milk and hardly ever eat meat and fish.
I usually have porridge with almond milk and berries, muesli with almond milk, toast or pitta bread with marmite, hummus and tomato or mushrooms, sliced apple with peanut butter or quite often, nothing.
