I’d like to eat more plant-based meals but breakfast is a challenge. Looking for inspiration for something filling and straightforward to make. Thanks!

Stewed black eye beans topped with plantain paired with a slice of avocado wrapped in a roti with a smidge of hot chilli sauce makes for one of my favourite weekend breakfast. Close second is yam and tofu scramble. Weekday options include bagel plus peanut butter and honey or porridge with oatly mylk with nuts and bananas.

Over Xmas I made granola
Oats
Nuts (I used pecans and hazelnuts)
Dried fruit (I used sweet cranberries)
Mixed it all with maple syrup spread on a baking tray
Around 20 minutes on 180 or until it's starts to brown

I served in with homemade hot cranberry and orange sauce and alpro vanilla yogurt.
I ate it everyday over Xmas it was delicious

Ok:

Porridge/oatmeal with toppings such as flaxseeds, chia seeds, fresh berries or banana, chopped nuts, a drizzle of liquid sweeter (maple syrup, agave syrup, date nectar, coconut nectar).

A smoothie such as banana, frozen berries and spinach with plant-based milk or coconut water (I usually add a superfood powder such as maca, spirulina or moringa).

A 'Full English Breakfast' with Linda McCartney sausages, homemade baked beans (made with haricot or cannellini beans, chopped onion, garlic, salt, smoked paprika, dash of cumin, dash of Tamari or soy sauce, liquid sweetener, and a bay leaf - all simmered down for a few minutes), sautéed chestnut mushrooms and cherry tomatoes, and a slice of sourdough toast. Sometimes I'll make a chickpea or tofu scramble, too.

Sometimes just sautéed chestnut mushrooms and cherry tomatoes on sourdough toast.

Smashed avocado on toast with a drizzle of fresh lemon juice, topped with black pepper, sunflower seeds and chilli flakes.

Bowl of 'Nice-cream' made by throwing a few frozen bananas into the food processor and processing them until they form an ice-creamy consistency (may need the help of a dash of milk), followed by a few frozen berries - voila, plant-based ice-cream (and a delicious breakfast or treat)!

Newly vegan here..
I don't eat breakfast but teen dd has smoothie bowl... Berries, banana, avocado, protein powder, almond milk.. Blended and topped with chai seeds.

I had double expresso and bag of jelly tots today... Not most nutritious

Seed bread toast with peanut butter or marmite or jam
beans on toast
grilled tomatoes on toast
garlic mushrooms on toast
mashed avaocado on toast
smoothie of frozen berries or mango and banana with almond or oat milk

I use Huel a lot because it’s vegan and I really like the taste. I’m actually vegetarian so if I don’t have Huel I have cereal and milk which doesn’t help you.

Cornflakes, chopped pear, chopped apple, satsuma segments and soya milk is nice
Kale and tofu scrambled with a little (vegan) Thai curry paste is delicious
Vegan breakfast with any combo of avocado toast, homemade chunky baked beans (or Heinz), vegan sausages, scrambled tofu, grilled tomatoes, mushrooms, hash-browns, bubble and squeak, sautéed greens.
Hummus on toast
Tahini on toast
Marmite on toast
Vegan cheese on toast
Baked oats
Oat muffins
Other vegan muffins
Banana bread covered in nut butter
Toast and nut butter
Oats cooked in vegan milk substitute (or over night oats)
Bean and vegan cheese burritos, quesadillas or wraps (with or without salsa, guacamole etc.)
Sweet potato fries loaded nacho style or nachos
Vegan patties or falafels in pitta bread with salad

I think vegan breakfasts are the easy bit to be honest

I sometimes eat "unconventional" breakfasts, like a big bowl of grains, greens and avocado covered in toasted seeds and tahini dressing which tastes just as good in the morning as at lunch or dinner

I had a gosh beetroot burger that needed to be eaten so I have just had it sliced in half down the middle on two buckwheat cakes with mustard, tomato and lettuce. Not a normal breakfast but tasty, healthy and I know it’ll keep me full til lunch.

I usually have toast with naturli or shreddies but sometimes have a roll with vegan sausage and potato scone or sometimes have a green smoothie really depends how I feel.

I'm not vegan, but I like these at breakfast time:
Alpro soya/coconut "yogurt" with a handful of raspberries or blueberries.
A banana (quick and easy!)
Toast with mashed avocado.
Porridge made the traditional way (soaked in water overnight then cooked with more water till creamy) with a sprinkling of demarara sugar and chopped nuts.

I am not vegan wither but today I had a handful of nuts and an apple. Saw a tip in a book to add edamame beans to avocado and toast for protein. I have also been having a slice of bread spread with pumpkin butter and topped with leaves and jarred artichokes.

Everyday I have two tablespoons of grounded flaxseed both for the Omega 3 and anti cancer properties.

Then I would later have berries, sometimes peanut butter on black bread, or rolled oats with dates

I'm an omnivore, but...

Porridge made with hazelnut milk is gorgeous, especially with a little cinnamon, maple syrup, and sultanas.

Or make overnight oats using almond milk, and the dried fruit of your choice.

I honestly think the nut milks are better for breakfast foods than dairy.

recently I discovered a superfood called jujube fruits. they have a caramel flavour so I'm putting them on top of my porridge and avocado toast among with peanut butter, gives a taste!
