I want chicken soup!?

But I don't really want chicken soup...what I want is that creamy, comforting, every-so-slightly-bland yet peppery bowl of nostalgia that makes you feel warm from the inside out and soothes your tummy.

My usual carrot and coriander, sweet potato and apple and parsnip soups just aren't cutting it. Does anyone have any vegan friendly alternatives that might fit the bill?

The soups you mentioned are all quite sweet.
How about a run of the mill vegan friendly leek and potato?

chocoshopoholic · 31/07/2017 21:48

Smooth leek and potato with lots of ground pepper?

PootlewasthebestFlump · 31/07/2017 21:50

Smooth red lentil might work?

Idratherhaveacupoftea · 31/07/2017 21:52

Chestnut mushroom and sweet potato is delicious. Parsnip, leek and ginger?

Synecdoche · 31/07/2017 21:54

Well now, leek and potato...

Or even just potato soup. Does such a thing exist?? Is this madness?

Pea and mint is my go to comfort soup.

Boil frozen peas. Season. Add dried mint. Blend. Takes 10 minutes but it's smooth and sweet and easy to eat.

theleavesaregreener · 31/07/2017 21:56

Try Anthony Worral Thompson's red lentil soup recipe... it's online and it's dreamy!

Synecdoche · 31/07/2017 22:01

I love soup. Thank you all!

Chicken soup.

I whole boiler. Cover with cold water. Two onions quartered. Two carrots sliced. 6 black peppercorns. Two celery stocks chopped. Chicken stock cubes. Bring to boil. Simmer for two/three hours. Cool overnight. Remove fat.

Remove most of chicken except for shredded bits that have fallen off and maybe the meat off a leg.

Heat through and add vermicelli

Chicken soup like mama used to make called loction. But somehow I just can't make it right.

Thug Kitchen's wedding soup with beanballs and kale. We (a bunch of omnis plus 1 vegan) had it today and my dsis described it as vegan chicken soup!

Synecdoche · 31/07/2017 22:11

I have Thug Kitchen so will definitely look that one up - thanks contessa

nip That's definitely the real deal...but unfortunately I'm looking for vegan alternatives. A misleading title on my behalf! Thank you though.

I once made Jerusalem artichoke soup that was creamy and delicious, that might be a good substitute?

ChardonnaysPrettySister · 31/07/2017 22:24

Green lentil with spinach

Red lentil with tomato, coconut cream, ginger and lemongrass

Synecdoche · 31/07/2017 22:28

You know beauty I have never eaten an artichoke. To my shame I don't think I've ever even seen one before. Does this make me a bad vegan? Have I been missing out??

In my mind it tastes like a cross between fennel and celeriac. Am I close...?

PaperdollCartoon · 31/07/2017 22:30

You want this stuff, just like chicken stock but vegan. Use it to make a mushroom soup - mushrooms, potatoe, leek and onion with rosemary, thyme and garlic. It'll sort you right out.

I want chicken soup!?
Blushme · 31/07/2017 22:31

Leek and potato my fave!

Fry some onion and leek, when soft add vegetable stock and potatoes. Boil till pots are soft and then blend. So creamy and yummy!

Synecdoche · 31/07/2017 22:32

That looks promising, paperdoll!

Jerusalem artichokes (the root veg) are more like celeriac than fennel. I have eaten once or twice in restaurant. They have a reputation for being tremendously fart-inducing. I don't think they are related to globe artichokes.

AssassinatedBeauty · 31/07/2017 22:36

No, it's not aniseed-y or as celery like as celeriac. They're like really savoury tasty potatoes with lots of flavour. I really like them but they are hard to find out of season. They are also notorious for making you a bit windy!

Synecdoche · 31/07/2017 22:37

I consider myself forewarned and forearmed with regards to artichokes! Toot toot Wink

Delia Smith's late summer soup. Up the potato, it doesn't need the cream. I am not vegan but it hit the same spot as chicken soup.

QueSera · 31/07/2017 22:38

For my chicken (noodle) soup replacement i use marigold reduced-salt vegan bouillon powder; and baked tofu pieces (either ready-made Cauldron ones, or homemade) - and the usual veg (eg onion, carrots, green beans, sweetcorn, whatever you like) and broken up spaghetti. But then the chicken soup i used to have was always in a broth, not creamy.
Hmmm i want some now lol
