I want chicken soup!?

But I don't really want chicken soup...what I want is that creamy, comforting, every-so-slightly-bland yet peppery bowl of nostalgia that makes you feel warm from the inside out and soothes your tummy.

My usual carrot and coriander, sweet potato and apple and parsnip soups just aren't cutting it. Does anyone have any vegan friendly alternatives that might fit the bill?

Synedoche It was recommended by Bookbook on the allotment thread, well the basic concept and I googled that one. I added spinach, Book adds courgette. Next time I make it to freeze anything glutting and green will go in.

I put a tin of chick peas in most soups I make. Once the soup is blended it gives it a really nice extra creaminess.

Mmmm what about a hot and sour soup

NowWhatUsernameShallIHave · 31/07/2017 22:55

With tofu

Sainsbury's instant chicken noodles are 1) vegan and 2) surprisingly like chicken soup. They're broths, not creamy, but they're carby and soothing and hit the same spot IMO

Cauliflower and cannelloni bean soup is pretty creamy.
I put nutrional yeast, oatly cream and violife Parmesan on top if it's for comfort food.

Maybe an American style chicken soup, which has lots of chunky vegetables and sometimes noodles in it, using vegetable stock instead of chicken?

Pret do a no cream, cream of chicken soup using blended celeriac, cauliflower and fennel to create the creaminess. I wonder if you could rid of the chicken but mimic the creaminess in the way pret do? Ingredients on their website!

Interesting...I will check those out!

Why not use coconut milk to make thai style veg soup?

Could you make soup using a tin of Marigold braised tofu? I am not vegan but I think that the Marigold tofu gives the same comforting taste. Maybe use sweetcorn or leeks with it?
