I’m looking for an interesting hotel, a bit luxurious. The only place we have been like this so far was the Midland Hotel In Morecambe. DH loves 20th century architecture so somewhere similar would be great. Or any interesting, historic building. I’d like a pool and sauna.

I thought Burgh Island too! I'm not sure it has a pool but definitely interesting and historic!

I would recommend Swinton Park estate in N Yorkshire.
It’s gorgeous. Family owned and run. Totally unique. Beautifully styled. The service is excellent.
it also has lovely facilities, spa, pool etc. even a wild swimming lake.
the food is amazing too.

Another vote for burgh island. I’ve been twice and it’s amazing. Very atmospheric.

We loved the Langdale Chase hotel. Right on Lake Windermere, no pool, but lake swimming easy, terrific food and beautiful rooms.

Thanks for all the suggestions. We’re in Devon so Scotland probably too far for this trip (should have said). I have considered Burgh Islabd as we’re not far from there and DH is an Agatha Christie fan but put off by the strict dress code but I haven’t checked whether this is still a thing. I’ll take a look at all of these. I’m open to city or countryside. Headland in Newquay is a good shout as I live Cornwall.

I was going to suggest Gleneagles but I see that Scotland is too far. The Grove in Hertfordshire is really nice. It’s got an indoor and outdoor pool (with a small man made beach!).

Strict dress code at Burgh Island is only in the ballroom (black tie). You can opt to eat in the Nettlefold restaurant instead or eat at the Pilchard Inn next door.
