Of the best way to learn about your body, the muscle groups and the best exercises for them ?

I've been looking you tube but keep finding full workout videos which isn't what I'm looking for just now.

I've been getting weekly PT sessions and feel like I want to learn about my body, what exercises target which muscles etc.

Are they any books anyone could recommend ?

Bill Pearl's Keys to the inner universe is a really good book.
Although it has been used for decades by body builders it shows you numerous exercises for each body part.

I like Ben yanes on Instagram for this. I also follow some anatomy accounts to learn about how things work. It's fascinating!
