The school dinner ladies at my primary school used to make an epic lemon meringue pie. It had lemon curd, then a layer of a kind of bitter lemon jelly and then the meringue. I have never found another one as good.

I love lemon meringue pie too. Have also been known to make a pretty good pineapple meringue pie if I do say so myself .

I love a LMP but they take too long to make. One day when my kids are less annoying.
