The guy who was overseeing Joe earlier is Nick Beardshaw (he was on the GBM and works for Tom in London). His presence makes me think when the cameras aren't rolling on a particular contestant they have someone coaching them on what to do. It makes sense when you think how skilled and unusual some of the recipes are.
