We actually had iberico pork that rare in Barcelona and it was amazing!

Well I'm doing a deconstructed souvide squid ink trifle with samphire jelly, yuzu custard and fennel whipped cream. Topped with pork scratching hundreds & thousands, served with a sea buckthorn reduction. On a bed of cow heel, garnished with fresh nettles.
