Presently living in Chester - renting - and now looking to buy. Know the area just by driving around and have looked at two detached houses on Berwick Road which I really like, but unsure of surrounding area so looking for some advice please. Budget around £550k but (very) happy to pay less for a refurbish project!

If you have £550k budget and only need 3 beds you really should be able to stay in the Chester area. I'd see the Wirral as a compromise, and Little Sutton and Great Sutton are essentially just a part of Ellesmere Port IMHO.

Have you looked at Waverton, Rowton, Christleton all on the edge of Chester, and Tarvin slightly further out?
