Why do so many people have such difficulty pronouncing the letter m in a word? Inbeciles.

Over time languages do change to become easier to pronounce. One way in which this happens is by moving adjacent sounds so they are closer together in the mouth.

Thus the prefix /in/changes in the words impossible, intangible and incredible (a ng rather than n).

M is made with the lips and th with the tongue so it's quite natural for this to shift and as long as there's no loss of meaning I feel that's ok. Changing to "sunthing" means both consonants use the tongue, while in "sumfing" both use the lips so it's fascinating that both are developing at the same time.

Impossible has m because like the p it is produced by the lips. Incredible has a velar nasal (like the ng in sing) because that is produced on the soft palate like k. The latter isn't obvious to the ear but if you pay attention to your tongue position when you say it, you'll feel that it's not the same as when you say intangible.
