Toppy I did make the galettes. Found they were great for breakfast and really filling with a tbsp cottage cheese on top. Take a while to master but you eventually get the hang of them and can make a load in advance. Add some smoked salmon trimmings (cheaper) and they are delicious with a squirt of lemon juice.
My big tip is On Sunday cook loads so your fridge is full of stuff for the week so if you get the munchies you have something you can grab:
Crab sticks
Sugar free jelly (for a sugar fix)
I adore cinnamon so add it and sweetener to nat yogurt.
Prawns, loads of cooked chicken breast,turkey mince meatballs. Cooked salmon.
Tuna " muffins" I eat these for breakfast, or really good for lunch at work,recipe below
Herbs to make stuff taste nice (lemon juice and mint, lime and Thai frozen herbs etc)
Dijon mustard with yogurt as a sauce...nice!
Tuna Muffins
I use a silicone muffin tin,well greased, 12 muffins.
2 tins tuna
600g fat free cottage cheese
6 eggs
12 tbsp oat bran
Grated zest of a lemon
Black pepper
Mix it all up, pile in tin. Cook 180C for 35/40 mins. Leave to cook.
