Morning all!

So today is our last formal weigh-in for this Bootcamp. However, we will keep this thread going for chat and support, as I know some will be continuing.

I'm currently away and it’s difficult copying etc, so would someone mind posting a link to the spreadsheet, and then linking this thread to last week's chat thread?

I'm being realistic based on past experience Xmas Blush and assuming I'll put on 4-7lb over the Festive Period Xmas ShockI'll blame the extra alcohol that we're going to enjoy Xmas Wink

I'll then be back on to strict Boot Camp for the first 2 months of 2025 as we're off to Australia for the month of March and going to my cousin's wedding while we are out there - so I need to buy a nice dress for that Xmas Grin

Had anyone got any family friend low carb veggie recipes? I've had a look through the veggie recipe thread but I'm not feeling inspired/DD wouldn't like it 🙄

DD7 decided to become pescatarian last month which has somewhat complicated my meal planning. Could do with some veggie meals to add in around the fish so that I'm not cooking different meals.

She's got a pretty varied palette for a 7 year old but she's not a fan of cauliflower, melted cheese, cream based sauces. I need to try her again with paneer and halloumi because if I could get her to eat either of those in a curry that would make life much easier.

She's great with pulses based veggie dishes but obviously that doesn't work for me. I'm drawing a bit of a blank and probably missing some obvious meals.

Some veggie ideas that might not be on the recipe thread

  • quorn chilli (I have with Konjac rice and lots of sour cream/cheese/guacamole)
  • mushroom & cheese omelettes
  • stir fry with tofu or egg fried Konjac rice (add peanut sauce for extra fat)
  • mushrooms stuffed with cream cheese, garlic, pine nuts
  • think there is another paneer curry on the thread BIWI mentioned, my kids also like it stir fried with peppers and mushrooms and a bit of garam Marsala/curry powder
  • fajitas with quorn/tofu and LC tortilla

Something I cook fairly regularly is sausages with roasted veg - but if you can get your DD to like halloumi, that works just as well as sausage.

I usually roast some combination of onion or shallots, a mix of red, green and yellow peppers, courgettes, cauliflower, broccoli, sometimes carrots, tomatoes, cloves of garlic. Coat well in plenty of olive oil and season well with black pepper and sea salt. Don't add the halloumi and tomatoes at first. Roast on a high heat for 20 minutes, then stir, add the halloumi and tomatoes, and then roast for another 20 minutes - or until the veg is nicely charred.

Sounds delicious. Even if she refuses to eat it, I'll be giving it a go! I've currently got carrots with Med veg covered in Ras el Hanout in the oven, to have with salmon 😋

Only 6lb up from where I'd got to last year, so I'm happy with that Xmas Grin, given where I'd started from in October (18+lb heavier Xmas Blush).

Weighed myself this morning , with my eyes partially closed as I’ve fallen off the wagon a bit this week with eating in Italian restaurants and not having salad etc and I’ve actually hit the 12 stone mark . In mid September my BMI was 29.2 today it is 25.5 . I couldn’t be happier . Merry Christmas to all the fellow low carbers 🎄

How is everyone doing? I am not feeling great after Xmas indulgence so am aiming for lots of water and lowering the carbs back down today (or at least making them healthier ones and not so sugar based). I think I have more work to do in the new year on emotional eating!

@LCagain I'm feeling sluggish and achy
I’ve weighed in , and I’ve put on 4lb ( in 4 days , as it was DH birthday as well on 23rd )
lots of water today , definitely no potatoes , bread or parsnips , we need a shopping trip to get some green and leafy veg later
I'm almost looking forward to the new Bootcamp starting 👍

Another here that seems to have put on 4lbs in a very short space of time 🤦🏼‍♀️

I'm WFH today with minimal food and maximum water. Dinner this evening is various salmon and prawn dishes with coleslaw and marinated cucumber.

@CleanQueen123 and @SemmaLina That weight gain won't be fat though - it will be a replenishment of your glycogen stores. Plenty of water and - if you can - some/some more exercise, as well as back on the wagon pronto and you should be fine.

A belated Merry Christmas to you all!

I haven't dared jump on the scales yet, but imagine it will be similar to the 4lbs others are seeing. Very ready to get back on it after New Year and to try and ease back of the carbs a bit between now and then too. I will not miss the generalised bloat!

I seemed to have gained 7 pounds in less than a week. The worst thing about it is that I honestly haven't eaten that much and have said no to so many things.

Does anyone have any thoughts on whether we can mess up our metabolism? I know that with bootcamp we don't need to track calories but I seem to find myself in a place that I gain weight if I eat over around 1200 calories a day (I have been weighing and tracking everything on Nutracheck to check I'm not living in some fantasy world of what I'm eating!). This just doesn't feel sustainable for life!

Lots of water yesterday seemed to help! Am going to meal plan today and have LC options to look forward to instead of looking longingly at all the leftover treats around the house...

Merry Christmas all! I'm very much looking forward to January's bootcamp; it's amazing how just a couple of days of slipping can result in so much bloating! On the plus side, I made a delicious pud for Christmas day; the almond pastry from the shallot and gruyere tart recipe, and filled it with a mix of mascarpone, melted 90% lindt and almond butter (whisked together), then chilled in the fridge.

@Magnolia82 I'm similar in that I've found that if I want to lose anything, I have to watch calories. The limit I've come up with is 1500 (I'm tall and don't have much to lose), and I also keep my net carbs at around 20g. I think I'd struggle to stick to 1500 on my normal high carb diet (without feeling constantly hungry), but I genuinely feel satisfied on this WoE at that limit. 1200 does sound low tho. Have you played around with this number, e.g. increased to 1300 for 1 week for example, to see if you do have to keep it so low? And ignore any 'gain' over Christmas. It isn't a true gain and will come off in no time when normality resumes!
