Day trip ideas from Edinburgh during easter

We don't generally drive but are planning to hire a car for local (or further afield) day trips for a week during easter hols - any good suggestions for where we could go (kiddies aged 7, 5 and 3)?? Thanks in advance :-)

St Andrews- only one and a half hour drive; great beach (bring kites/picnic) , sealife centre, Himalayas putting course, castle and shopping. Also just outside the town is the Craigtoun country park which has a mini railway, boating pond, trampolines , adventure park and zip wire. East Links is lovely, Almond Valley, Time Capsule for swimming. Beescraig Country Park and Almondell is good.

Anstruther is nice too. We parked, then got ice cream before having a wander and getting some chips from the chippy on the beach.

We have also been to the Falkirk Wheel and New Lanark for day trips.
