What's your favourite "substantial salad"?

You know, the kind of thing that can be served as a one dish meal with bread and maybe cheese alongside. In the summer dh and I often have something along these lines, but I fear that I have fallen into a rut.

To get the ball rolling, my current favourite is Delia's couscous and roasted vegetable salad.

Green salad leaves, torn mozerella, parma ham, sundried tomatoes, with a balsamic dressing, served with nice bread.

Warm goats cheese with honey and bacon/lardons. And Balsamic vinegar.

There is a grotty spit and sawdust pub in Nottingham that winos and bagladies hang out in, that does the most incredible food- I have been going there for 4 years and always have their Greek salad, which is your bog standard leaves etc, with home made humus (sp???) and warm pitta bread and about half a kilo of feta.

Spinach leaves, roast chicken, black olives, cherry tomatoes, yellow and orange peppers, avocado and bocconcini. Dress with olive oil, balsamic and a dab of mustard (the seedy one)

Chunks of roasted butternut, beetroot, chickpeas, spinach, pinenuts and feta. Often add chicken to it too.

Ooh that sounds delicious Freakoid! I love all of those things but haven't had them together yet...

I like bulgar wheat mixed with broccoli, red onions, pine nuts, smoked mackeral, lemon juice and olive oil, all served on a big palte of lettuce or spinach!

I like smoked mackerel with rocket leaves and watercress with chopped tomatoes and hard boiled egg, chopped red onion and then a lovely french dressing or, even better olive oil, cider vinegar and horseradish sauce. Perfect.

Avocado, prawns, marie rose sauce (home made) on salad leaves which must include spinach and watercress with thinly cut brown bread and butter on the side.

Oh I love salads!

Chicken Caesar is a fave.

Couscous and roasted veg

Bulghar wheat and veggies

Hot potato and spicy sausages on bed of mixed leaves

Had wild rocket, mozzarella balls, olives and tomato for lunch with a glass of Rose and crusty bread. Twas lush!

Nigella's caesar (with the cubes of crisp garlicky roast potato, cos, parmesan etc.)but without the egg and instead with chunks of hot pot-roasted herby chicken. Every time I make it and however much I make the dish ends with every scrap scraped up.

Avocado and bacon with toasted pinenuts and loads of fresh crisp lettuce. Very important to dress the avocado with lemon juice and S+P. Sometimes add shredded chicken too.

This is a fab thread. I am definitely coming back to steal ideas! Love the sound of ninedragons and freakoids' ones. Also suspect I may need to make the smoked mackeral one for DH as he would love that.

tomato and mozarella with rock salt and olive oil is always surpringly fillings esp. with avocado and some capers.

king prawns, mango, avocado

finely chopped tomato, cucumber and pepper

couscous with feta and black olives

sliced avocado, sliced tomato and torn mozarella with salt, pepper, italian seasoning and olive oil on.

also nice with a little bit of pasta mixed in with it.

-- roasted eggplant with spices (chilli/cumin/ground corriander/cinnamon). Cut up into small pieces and oven roasted for about 15/20 minutes. Cool down and add plain yoghurt.

-roasted butternut, parmesan shavings and parma ham
-smoked mackerel, watercress and pink grapefruit
-poached salmon,lambs lettuce, tomato, red onion with a creme fraiche and dill dressing
-potato salad with new pots from garden ( taps fingers ), dill, spring onion, ex v oo and sherry vinegar
-puy lentils, feta/goats cheese, sunblush toms, cubed cucumber, fresh cubed toms

  • oh and for retro naughty yumminess, coronation chicken with plenty of sultanas

Jamie has some great salads in the latest Sainsbo's mag. I tried the Swedish caesar salad. Quite a lot of work, but very good.
