What's your favourite "substantial salad"?

You know, the kind of thing that can be served as a one dish meal with bread and maybe cheese alongside. In the summer dh and I often have something along these lines, but I fear that I have fallen into a rut.

To get the ball rolling, my current favourite is Delia's couscous and roasted vegetable salad.

Mouth watering thread!

I love a lentil salad, ones with some bite, green or puy. Dress while still warm with LOTS of olive oil, lemon, salt, pepper, herbs (mint, corriander, chives, what ever's to hand). That's a base, add chilli, roast toms, feta, olives, etc as the mood takes you!

Courgette...thinly slice courgettes length ways and griddle. While warm toss in lemon, basil, olive oil, touch of garlic, mint, toasted pine nuts if you can be a**ed. Feta's a nice addition if you want protein.

I love thai style salads too. Cold noodles dressed with tamari, sesame oil, lime, corriander, and thinly sliced salad veg, eg, Q, carrots, pepper, bean sprouts...no need to slice those! Etc. Fried tofu and / or peanuts. Apologies to anyone thai for insulting your food culture with this over simplified thing.

Any way, thought of another... roasted onions, peppery and bitter leaves, parmesan shavings, a mustardy-red-wine-vinegary-dressing.
Thinking about it a crouton wouldn't go amiss...

The restaurant Ask do an absolutely delicious salad called Chef's Salad which, as well as leaves, tomatoes, cucumber and peppers, has artichoke, mozzarella, avocado, proscuitto and hard boiled egg. I always choose it for a main when I eat there, unbelievable for me as I usually like to stuff my face with carbalicious fare when I eat out. Recommend it.

Lovely rice noodle and turkey salad in nigella's feast(sorry I can't remember what it's called) but the dressing of chilli, garlic, ginger, lime juice and fish sauce is key, I use it with everything it makes me stink ,but is the cat's pjs

I had a lovely salad while we were out today.

It was lettuce, parmesan, real mayonaisse, warm shredded chicken (think it maight have been seasoned with soy sauce) , huge garlic croutons, orange peppers, cherry tomatoes, parmesan and a poached egg.

Just had smoked salmon and boiled egg salad, plenty of vinagrette, yum. (I'm a bit hungry already though, so perhaps not so substantial)

wow, so many great ideas,

the one I did for lunch today was cooled new potatoes, salad leaves, buffalo mozzarella, tomatoes, red onions and asparagus. Nice and seasonal.

I second the puy lentil ideas, good old Delia does a nice one with goat's cheese and rocket stirred through it.

cold pesto pasta with pine nuts
baby plum tomatoes
diced cucumber
feta
mixed leaves (pref rocket/watercress/spinach)
diced spring onions
diced boiled egg
sauteed lardons
sweetcorn
and maybe a couple of those baby beetroots in sweet chilli and honey.

oil and balsamic dressing plus loads of crushed black pepper

Or I like couscous mixed with a teaspoon of harissa and then
tuna mayo
sweetcorn
spring onion
cucumber
all mixed up together. With a few cherry tomatoes on the side.

Or diced chicken adn bacon with mixed salad leaves and tomatoes with creamy dressing over the top and loads of black pepper.

Eating salad at least once a day at the mo

a salad isn't substantial
to be honest i found a note in my sons bag about the perfect salad

they listed the 'waldorf' do they really think 8 year old london boys know what this is!??!

lots of crisp little gem lettuce filled with broad bean, potato and bacon tossed in either a warn vinaigrette dressing or with mustard mayonnaise.....delicious!

Amsterdam salad

Grilled slices of courgette (brushed with walnut oil)
Salad leaves
Slices of avocado
Cubes of Feta
Chunks of artichoke
Green olives
Toasted pine nuts

Dressing made with a little lemon juice, walnut oil, a little mustard and some white wine vinegar.

Yum!

bulgar wheat, chickpeas, feta cheese, chopped fresh tomatoes, chopped avocado, grated carrot. with a light garlic salad dressing mixed in and some salt and pepper.

1 bowl cooked pasta
1 jar sun dried tomatoes in oil, diced
1 jar anti pasto peppers
100g packet flaked almonds, toasted
couple of handfuls of raisins or sultanas
1 jar harissa

Mix it all up. Delicious, spicy and can keep all ingredients in store cupboard until needed.
