Minced beef cobbler - fry the mince with onions, mushrooms, or whatever veg you have to hand, add some tinned tomatoes and herbs, bubble for half and hour and then put into a casserole dish. Then rub 3 oz fat into 6 oz flour, add salt and pepper and even some grated cheese if you like, add enough milk to make a dough, and then put balls of the dough mixture all around the edge of the casserole dish. Stick it in the oven and bake it for about half an hour.

Ingredients
225g/8oz minced beef
1 mediun onion, peeled and chopped
125g/4oz mixed frozen pepper or fresh
125g/4oz mushrooms
400g/14oz can of tomatoes
200g/7oz can of baked beans
1 tsp chilli powder
1 tsp oregano
1 tsp basil
little oil for frying

Method

  1. Fry the mince beef in a drop of oil then add the chopped onion and cook until soft.
  2. Add your mixed peppers and mushrooms.
  3. Cook for 3 minutes then add can of tomatoes and baked beans and simmer on the stove.

i leave out the mushrooms as i dont like them and just add more peppers. And i use 2 big tins of chopped tomatoes and one big tin of baked beans. Makes a really yummy meal. can be served with rice, jacket potato, mash, chips, most things really
HTH

Binkie I live in Spain, so we now have a reason to call it Spanish rice, hahaha!

what about a sort of spag bol but then plop it into a lasagne dish, throw over lots of cheese (mozzarella, parmesan, whatever you have) and whisk in a couple of eggs. yum when it's crispy on top straight from oven. it's a bit like a lazy woman's lasagne. ish.

lucy5 · 04/08/2005 16:19

the lazier the better hahaha!

A bit like hercules said to make the burgers but roll into small balls - you can add some finely chopped onion or some herbs too. Mould the balls around a small cube of cheese & then shallow fry in olive oil or bake in the oven.

lucy5 · 04/08/2005 16:36

Sounds lovely, I stuff my burgers with blue cheese when we bbq.

Shepherd's Pie

Or, one of DH's fave comfort-type foods, a bit yorkshire pudding full of mince and onions, with thick gravy topped with some mash potatoes, and then popped under grill for a few minutes to crisp up.

binkie · 04/08/2005 18:04

trefusis, if you do deluxe burgers - just posh mince (eg M&S organic steak mince) without any filler or egg or anything - they don't fall apart (I find).

Topping I love: bunch of sauerkraut, slice of emmenthal on top of that, under the grill for a bit, serve with mocked-up "Russian" dressing (mixture of tomato puree, horseradish & Hellmans).
