I am a bit embarrased to say that I use Jiffy Mix. All I have to do is add milk and an egg and it taste almost as good as my Granny's

GossipMonger - not a recipe as such but I softened an onion (sliced, not diced) in some olive oil for a few mins, then added a generous dollop of red curry paste and fried that off for another minute or so. Then added half a diced butternut squash, cut into fairly big chunks, and about a tin of coconut milk (I made mine by mixing coconut cream to boiling water). You just need enough to cover the squash really. Cover and let it simmer away gently for 15-20 min until the squash is cooked, but not falling apart. The I just added some prawns (frozen that I had defrosted in warm water), and mix through. Check seasoning and serve on rice, with a scattering of coriander on top. Delish and pretty healthy too.
