The Hummingbird Bakery Book

Has anybody got the Hummingbird book? If so, what do you recommend I start with please? Just been given it as a present.

The cupcakes all look rather too sweet and rich but I am willing to be persuaded otherwise!

Made the peaches and cream cupcakes last night.

Would recommend more than halving the amount of peaches stated, and mixing them around in the cake casing before putting in the oven.

Otherwise, nice.

Must forward the list of corrections to my mum.

She said there was far too much milk in the basic cupcake (I think) recipe.

the lemon and poppyseed cake is fabulous. I want some now!

The biscuits I have made have all been brilliant and the cupcakes I have made from it have all been awful! Dunno what I am doing wrong.

I've made the cupcakes and they come out lovely. They don't really rise though so I just fill the cases up with mixture.

I have the book though not made anything yet. It gets pretty bad reviews on amazon for the recipes, which is a shame as they look yummy!

I made the blueberry cake using the wrong size tin. It glooped everywhere over my oven. My own fault - should have read the excellent link on here to corrections. It was however, recoverable by smothering in the delicious icing and a spell in the fridge.

The peanut butter choc chip cookies are fabulous.

I am looking for an excuse to make the signature cake.

Beware! As the link to correction says there is a note at the front of the book explaining that English and American cupcake sizes are different, their cupcakes = our normal muffin size. Have made the lemon cupcakes but a bit disappointing, did not rise well and only made 12 English size, will try to increase oven temp. and use American size case and see what happens...
