Has anybody got the Hummingbird book? If so, what do you recommend I start with please? Just been given it as a present.

The cupcakes all look rather too sweet and rich but I am willing to be persuaded otherwise!

Try the blondies then, they are spongy like cake, so yummy. The dd's and I made them today and I'm trying to ignore them calling me from the kitchen!

Dd is having a little tea party on Sunday , I was going to make some cupcakes from the book. I may have a trial tomorrow.

I would say go for it if you want a few basic recipes but also want to make special goodies for teas or parties. I made the coconut cupcakes and they were yummy! I SO many cook books but this is the best for fancy baking by far.

Yes we had coconut cupcakes and they were lush as were the lemon ones which I added some lemon curd to after baking. I also made the strawberry cheescake ones, the frosting is lovely but the strawberries stuck to my cupcake case spoiling the effect.

They do not raise well though and the frosting recipes are over generous.

Ooh I'd forgotten about this thread! Thanks everybody. I still haven't made anything (have been ill most of the week - grrr) but intend to try out at least a couple of things before the end of the holiday.

I have looked at this book at least 3 times this month and not bought it. Just ordered from Amazon for £8.49 - bargain.

Will make something and report back next week

Janeite - lucky you getting this as a present - I dropped hints for both this and the Come Dine with me book for my birthday but got neither...

Off to see how much book is on Amazon as I really want it after reading this thread!

erm off hand, the chocolate cupcakes and blueberry muffins - will have a look in the morning to remind me, sorry

I do remember thinking that the blueberry muffins weren't better than Nigella to justify the sugar content

have got the ingredients for the raspberry white choc cheesecake brownie thingies so will let you know how I get on with those

I have tried most of the cupcake ones and they are DELICIOUS!!! The red velvet ones always get the most comments. The Brooklym Blackout cake is gorgeous and the brownies and blondies are delish too. The cheesecake raspberry brownie thing went down very well too!

weso - agree on all the above. I think the amount of sugar in some of the recipes is too high - the blueberry muffins cut down by at least 80g of sugar - and it makes more than they say unles they have HUGE muffin cases.

The red velevet - been struggling a bit as not coming out red enough - maybe just a bit hesitant on that much colouring - do you ad the cocoa too as that makes it too brown - stil taste delish!

Was chatting to someone about this book last week, I wonder if cakes are not rising because you need to really beat the butter? Friend said butter amounts seemed a bit lower but maybe because sugar amounts seem higher? So beat lots of air into the butter at the beginning and then cream really well with the sugar and perhaps get a lighter result re: lemon loaf and cupcakes?

The banana loaf is my hubbys favourite, cookies are sooo good, cheesecake is evil can't stop eating it if i make it so try to stay away, don't want to put 10pounds on in two days I love that book apart from icing it's just too sugary so i make my own instead...

Have made the blueberry cake with the cream cheese icing - the ring shaped one - I used a 25cm Lakeland ring tin, but there was way too much mixture for the tin- It was gorgeous though - have foundthis list of corrections though, so will have a look through this before I make the lemon & poppy seed cake that my friend has "ordered" for her birthday on Thursday!
