Argh! My mind's gone blank. I'm looking for ideas to use some fresh spinach. Thinking maybe something and pasta?

Add fresh spinach to a sauce of onion (cook this first), mascarpone, lots of grated emmental and parmesan . Stir into cooked pasta

Chopped walnuts wilted spinach and a bog standard bechamel-type sauce but with blue cheese instead. Or just heat a bit of cream and melt blue cheese into that.
The healthy spinach will counteract the artery-furring cheese overload!

Veggie plov

heat some oil and butter in a pan. Fry onion and garlic in it. After 3-4 mins add tomato then add rice. Stir for a minute or 2 then add stock and season. Put lid on and cook for 10-15 mins then add spinach, put lid back on and allow spinach to wilt.

spinach and bacon pasta is a fave here.

brown off 1 onion and 2-3 cloves garlic, add pack smoked bacon cut up. when bacon cooked add lots and lots of washed spinach (800g ?), put lid on so it can steam for a few mins, season with nutmeg and pepper add dash of dbl cream/creme fraiche and stir to make sauce. pour onto pasta (250g uncooked) and enjoy!

v. quick and easy!

We had loads of pasta recently from my dad's garden and ate most of it with pasta. Just cooked the spinach and drained it well and mixed with cooked pasta, sun dried tomatoes, olives and cheese (mozzarella or goat's cheese worked well)

wilt the spinach. fry some garlic and add some pine nuts until golden brown. add the spinach. Add some raisins. Eat and enjoy.

Pasta primavera - pasta wtith wilted spinach, asparagus tips, fresh peas, really nice olive oil and I add capers because I love them.

Bean salad - butter beans, cherry toms, red onion, wilted spinach, feta cheese, olive oil and capers. Goes really nicely with lamb.

I also add spinach to my veggie curry.

It's really versatile - you can do lots with it.

Pastries!

Cook & puree spinach. Place in the middle of square cut dough. Add soft goat's cheese on top. Close four sides of square & put in oven. 180 C for 20 mins or so.
