Argh! My mind's gone blank. I'm looking for ideas to use some fresh spinach. Thinking maybe something and pasta?

I love spinach pasties! Or spinach and ricotta in filo pastry parcels.

Or what about eggs benedict. Just wilt the washed spinach in a knob of butter, put in a dish, salt and pepper, make four indents in the spinach, crack four eggs into them, cover with cheese sauce, oven for 15 mins - delicious I made this last week but forgot the cheese in the sauce - doh! Still nice though.

We just do spinach and mushrooms with lots of garlic and pasta.

Roast kumara cubes in olive oil, while still warm mix with fresh spinach so it wilts, add semi dried tomatoes and toasted pinenuts (optional feta cheese). My favourite meal.
