Best Brownie Recipe

I normally use Nigellas Flourless Brownie recipe, I love the texture of the middle but it’s just not hitting the spot at the minute. So recommendations for the best chocolate brownie recipe and the exact butter and chocolate you use please.

My trick is to brown the butter a lot more than the recipe suggests. I use any butter (mostly supermarket own) and cheap white choc cut into chunks, also works amazingly with matchmakers (esp mint!) + some peppermint/orange essence.

The BBC Good Food toffee brownies always get lots of compliments. I just use any unsalted butter and Sainsburys dark chocolate. I also cook for a few minutes less than the recipe time so they are super squidgy.

Using a thermometer transformed mine! I use a Thermapen ( has also been brilliant for meat and fish too)

I second Mary Berry’s recipe as recommended by
@BigBrownBoogyingBear They freeze well too.

For special occasions and especially Christmas I drizzle melted white chocolate across the top and then sprinkle on freeze dried raspberries. I buy them from Sous Chef.

Place marking for later I always struggle with brownies need a great recipe some of these sound fab! Thank you for sharing.

Ooh - I might have to try this! We stuck sugar eyes on the ones we made for Halloween - they looked great!

Wow so many to try. Thanks all. My daughter actually turned down my batch I made today so definitely need a new recipe.

I-tried about ten different brownie recipes ten years ago and found Jamie Oliver one (think it was from his Fifteen restaurant) is the absolute best for texture (gooey middle) and flavour. Have made it tons of times now. There’s an option to option sour cherries which go really well.

The Brownie Diaries has the best ever brownie recipes - it goes into the science of how to make them fudgey vs cakey so you can make them to your preference.
The base recipe is amazing and gets me loads of compliments, and can be easily adapted. The real surprise has been the gluten free brownie which I reckon might be better than the traditional.

The chilli and popcorn brownie was really popular at work, as was the millionaires shortbread one. It also has blondies, and brownie based puddings.

I make these. I’ve never got Brownies exactly right until I made these a few years ago and I’ve never tried another recipe since. I bake them for 29 mins for a fudgy middle I just use Sainsburys unsalted butter and dr oetker choc chips, sometimes milk, sometimes dark.

I sometimes buy a bag of mini M&ms and put half in the mix and half on the top before going in the oven.

I definitely have to try some of these as I gave up making my own years ago when Betty Crocker’s box kit brownies (used originally in a panic bake moment) got more compliments than anything I’ve ever slaved over!!

These are the ones I make, I usually use light muscovado and add a really good pinch of salt and a shot of espresso. I also like Lorraine Pascale's brownies with Oreos in them.

I use an edit of the nigella domestic goddess recipe:

Chocolate chunks instead of bits, and sub out part of the flour for cocoa. And I usually bake a half or third batch, which I think makes it easier to get them suitably cooked.

Tbf Betty C can be a life saver. I have to use her red velvet box cake because no matter how many tubes or gels or red dye I use in my own recipes it turns out pink. Her box always comes out bright red. So that’s my recipe for red velvet 😂
