I normally use Nigellas Flourless Brownie recipe, I love the texture of the middle but it’s just not hitting the spot at the minute. So recommendations for the best chocolate brownie recipe and the exact butter and chocolate you use please.

I make these. I’ve never got Brownies exactly right until I made these a few years ago and I’ve never tried another recipe since. I bake them for 29 mins for a fudgy middle I just use Sainsburys unsalted butter and dr oetker choc chips, sometimes milk, sometimes dark.

I sometimes buy a bag of mini M&ms and put half in the mix and half on the top before going in the oven.

Couldn’t agree more. I love how precise her timings are for different textures. I bake them for 24 minutes for the most gooey centres.

Instead of chocolate chips, I break up a cheapo Lidl dark chocolate slab (the 90p one, I think) and stir it in with a generous amount of walnut pieces. All my ingredients are from Lidl.

I’m sure if you use better quality ingredients, they’ll taste even better but this is good enough for regular baking.

Using a thermometer transformed mine! I use a Thermapen ( has also been brilliant for meat and fish too)

This might be the most useful mumsnet post ever @Defiantly41

Eternal gratitude 🙏

So many recipes! I used yesterday’s batch as ‘chips’ in Jayne’s Patissese cookie recipe today and they worked out really well.
