Ideas for using a whole chicken beyond roast or curry

Got a whole chicken and don't fancy a roast dinner or out other usual options of Nandos or tandoori style... mainly bought so I could use the carcass and leftovers for soup. Probably going to end up just doing a Caesar salad but does anyone have any other nice ideas?

Haha I was going to suggest a Caesar salad but with crispy smashed new potatoes and crispy skin (remove, salt, and blast in a hot oven) it’s my favourite meal atm!
You could also do a butter and tarragon recipe with potatoes.
Not sure what the weather is doing your way but a pie ?
I use leftovers for pad Thai. Loads of recipes on Instagram!

Joint it up to get the carcass, and freeze the breasts, legs and wings for another day.

Roast the chicken and use the meat in pad Thai and chicken fried rice.

You could either burcher it as pp aid or roast whole, then shred for sandwiches, dishes aetc (keeps well in freezer) and make soup from the rest.
If you have asian butcher near they sell hard chicken. Less chubby and perfect for soups. Imho it has perfect ratio of soup making parts as well as meat for the soup

I'd always roast it first as it takes 2 mins to prep a chicken for roasting. Then you have the meat ready for other dinners.

We have a roast then use the leftovers for:

  • chicken risotto with peas/asparagus/mint or with mushrooms and butternut and sage
  • Japanese-style broth with any of these: noodles, spring onions, greens, ginger, garlic, chilli, lemon, wild mushrooms, seaweed, soft boiled egg, sesame
  • thai-style curry with butternut, coconut milk, lemon grass, baby corns
  • satay crunch peanut and sweet chilli sauce with white rice, long stem broccoli and sugar snaps
  • stir fry with peppers, onions, mangetout, bean sprouts, pak choi, seasme, garlic, chilli and soy with noodles or rice
  • chicken wraps with smoky paprika tomato, sweetcorn, onion and red pepper sauce, shredded lettuce, guacamole etc.

Roast it or broil (?) it, pull the meat while it’s still warm and use to make a lemony chicken pie, chicken and ham pie, chicken and leek pie, chicken and chorizo pie…..

Boil the whole thing from raw into a stock. In your water add celery, onion, garlic, parsley, bay leaf. Boil 90 mins then cool.

strain the stock and reserve. Remove bones and skin from the meat leaving you with juicy tender delicious chicken.

then use your stock to make risotto or ramen broth for noodles or a supreme sauce with mustard and cream. Then add your soft chicken bits at the end of cooking.

Or don’t boil it. Remove the ribcage to spatchcock it. Marinade it overnight or for a few hours in a mix of garlic, lemon juice, oil and herbs whizzed in the food processor to make a paste. Either roast it or barbecue it and serve with a salad and rice or cous cos, pittas, dips, souvlaki style.

Im just making a really hearty chicken and vegetable soup with mixed grains and homemade croutons.from sourdough. I avoid UPFs wherever possible.

except i boil my chicken for a pie and use the stock to make the sauce. Then the meat doesn’t go dry like it can do if roasted and then re-used

Have it with tortilla wraps, tzatziki, salad with red onion, tomatoes, pepper, cucumber, olives etc, feta and some chips on the side.

Chicken wraps - help yourself style with cheese peppers dips etc. We love doing this.
Chicken pasta - with sauce of your choice. Arribiata is popular here!
Chicken salad - lovely on a hot day
Chicken pies - im not a baker so would cheat and buy pre made cases for it
Chicken casserole - always hearty
Chicken and chips

It's overtaken roast chicken as the favourite chicken dish in my house. It's the easiest thing ever to make, and it tastes amazing. Plus you get a lovely carcass to use at the end.

It's basically just a whole chicken, lots of onions and olive oil baked in a pot with the lid on. You add olives and parsley at the end, and serve it with fried bread.
What blows my mind is how much flavour you get from just those ingredients. The chicken comes out super tender, bathing in its own pot of rich, onion sauce. It's like a better version of French onion soup.

I can't recommend this recipe highly enough! And it tastes just as good as leftovers.

Yes that’s what I meant. Nice and juicy. Not sure what broiling is really, but boiling it with carrots, onion, celery, bouquet garnish etc is v much what I had in mind.

Oh haha broiling is the American word for grilling hence I thought that sounds a bit... dry... for a pie! Yum yum nearly back in pie season.

Vote for this! We 'discovered' it recently and OMG it's so so delicious.

You can also hack the recipe and do it with say tomatoes and chorizo in with the orzo instead of lemon. It's so good.

Spatchcocked, covered with olive oil, oregano, lemon zest & juice and pepper then roasted. Serve with Greek salad.
