Ideas for using a whole chicken beyond roast or curry

Got a whole chicken and don't fancy a roast dinner or out other usual options of Nandos or tandoori style... mainly bought so I could use the carcass and leftovers for soup. Probably going to end up just doing a Caesar salad but does anyone have any other nice ideas?

Chicken in Stilton. Serve nice pieces of the best meat in a sauce of single cream, WHITE Stilton cheese, Dijon mustard, freshly milled black pepper and a pinch of sugar. Delicious with roast potatoes, rice and mixed vegetables, to include brocolli.
